Discipline isn’t something I can hand you.
I’m a coach, not a puppeteer.

I can build the environment—structured, supportive, demanding.
I can challenge your excuses, hold up the mirror, and ask the hard questions.
But I can’t make you choose discipline. That’s yours to claim.

Discipline is independence.

Cheesy Ground Chicken & Broccoli Skillet

I’ve probably posted this before — and I’ll post it again. This is a staple in my training journey. Ground chicken is one of my favorite hacks: simple, flavorful, and fast.

One pan. Pure comfort. This version swaps chicken breasts for ground chicken — quicker cook time, same cozy vibes.

🛒 Ingredients
3 tbsp extra virgin olive oil
½ medium yellow onion, finely diced
1 lb ground chicken
2 cloves garlic, minced
1 tsp kosher salt + freshly ground black pepper to taste
1 cup uncooked extra-long grain white rice
2½ cups low-sodium chicken broth (Better Than Bouillon recommended)
2½ cups broccoli florets, bite-sized
2 cups shredded extra sharp cheddar cheese

🍳 Equipment
Large skillet or pan (GreenPan nontoxic skillet recommended)

👨‍🍳 Instructions
-Sauté the aromatics: In a large skillet, heat 2 tbsp olive oil over medium. Add onions and cook until softened.

-Brown the ground chicken: Add ground chicken, season with salt and pepper, and cook until no longer pink (about 5–6 minutes). Stir in garlic and cook 1 more minute.

-Toast the rice: Push chicken to one side. Add remaining 1 tbsp olive oil to the other side and stir in rice. Sauté rice for 2 minutes.

-Simmer: Pour in chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 12 minutes.

-Add broccoli: Sprinkle broccoli over the mixture, stir to combine, and cook covered for another 8 minutes until rice and broccoli are tender.

-Cheesy finish: Remove from heat. Stir in ½ cup of cheese. Sprinkle remaining cheese on top, cover, and let sit 1–2 minutes until melted.
