Ayurveda balances flavors with the seasons.
For a meal to be wholesome and nourishing it needs all six rasas (tastes)
Each food we eat has a quality of taste (bitter, pungent, astringent, sweet, sour salty )and an effect on the body (heating or cooling)
Depending on the season, our bodies will benefit from more heating foods or more cooling foods as will our prakriti (our bodies constitution that we were born with)

This is an example of the six tastes:
✨Rice- sweet
✨Mung bean- astringent
✨Mustard greens- bitter, pungent
✨Chili peppers- pungent
✨Yogurt- sour
✨Sea salt - salty
The flavors to favor for late spring/early summer are astringent, bitter, pungent
(think of leafy greens, chives, radishes, asparagus…)
