You’ve got to try this Protein Lemon Cheesecake🍋

It’s smooth, zesty, and shockingly close to the real thing.
Just blend, chill, and enjoy.

Ingredients:
190 g low-fat cottage cheese
Zest of ½ lemon
1.5 tbsp lemon juice (about 1 whole lemon)
½ tsp vanilla extract
Pinch of salt
Natural sweetener to taste
30 g graham crackers, crushed

How to Make:
Blend cottage cheese, lemon zest, lemon juice, vanilla, salt, and sweetener until completely smooth.

Crush graham crackers and layer or sprinkle on top.

Chill 30–60 minutes for peak cheesecake texture.

Nutrition (for the whole serving):
300 calories
23 g protein
34 g carbs
7.5 g fat

There’s something about a bowl of potato & leek soup that just feels grounding.

Simple ingredients. Deep flavor. Creamy texture without heavy cream.

This one is cozy, nourishing, and perfect for meal prep.

Potato & Leek Soup

Ingredients:
2 tbsp extra virgin olive oil
3 medium leeks, trimmed and chopped
Sea salt & black pepper, to taste
2 garlic cloves, chopped
5 medium yellow potatoes, peeled and chopped
6 cups low-sodium chicken broth
1/3 cup potato starch
1/4 cup chopped chives (for garnish)

Directions:
Heat olive oil in a large pot over medium heat. Add leeks, salt, pepper, and potato starch. Sauté 3–5 minutes. Add garlic and cook 1–2 more minutes.

Stir in potatoes, then add broth. Bring to a boil, reduce to a simmer, and cook 20–25 minutes until potatoes are tender.

Blend until smooth using an immersion blender. Top with chives and serve.
