Quick lunch loaded with healthy plant protein:
Diced cucumber
Cubed miso tofu
Splash of tamari
Sambal Oelek chili paste
Crumbled
If you don’t like cold, tofu, you can definitely throw that in the microwave for a minute or two, or sauté to get it crispy. Try making a similar bowl with your favorite salad dressing, barbecue sauce, or Japanese Kewpie mayo.
