Poor Man’s Honey (Dandelion Jelly) 🍯

• Harvest 8 cups of fresh dandelion heads
• Gently remove the yellow petals (the green makes your honey bitter)
• Divide petals between two quart jars
• Fill each jar with boiling water and let steep for 24 hours

Strain through cheesecloth, squeezing out every last drop—you should have about 8 cups of golden dandelion tea.

Pour into a pot and add:
• 4 tbsp lemon juice
• 3.5 oz pectin

Bring to a boil, then stir in 7 cups of sugar (Yes, it’s a lot, trust me!). Return to a rolling boil.
Ladle into hot jars, leaving ¼ inch headspace (8 oz jars work beautifully).
Process in a water bath canner for 10 minutes.
Let cool… and enjoy your jar of sunshine 🌼

The Mayapple has been valued in herbal traditions for generations.

Compounds from Mayapple have been used to support skin health, especially for things like warts and growths, and have played a role in more advanced medicinal preparations. It’s a reminder that even the quietest plants can hold powerful healing properties.

When foraging, timing matters. The only edible part is the ripe fruit—and only when it turns soft and yellow later in the season. Everything else should be left alone and respected for its place in the ecosystem.

There’s something special about getting to know plants through the seasons: watching, waiting, and understanding their timing.

Gramma always says, “Don’t overlook the “weeds” at your feet!” One of our spring favorites is cleavers (Galium aparine). Fresh cleaver juice this time of year always puts an extra pep in your step.

These tender greens are rich in: silica, potassium, calcium, magnesium, iron, vitamin A, vitamin C, flavonoids, tannins and chlorophyll, making them a beautiful spring tonic. Traditionally, cleavers are used to support the lymphatic system, soothe the skin, and help the body gently detox after a long winter. Cleavers are used medicinally to help rejuvenate the skin & slow signs of aging, reduce inflammation in skin disorders.

To make: Use about 1 cup fresh cleavers with ½ cup water, blend it up and strain it. Simple as that. Cleavers are best used fresh, so it's better to store them in the freezer than to dehydrate them.

Wild leeks (also known as ramps) are one of spring’s most exciting arrivals. With their broad green leaves and bold, garlicky-onion flavor, they’re a true seasonal treasure that only shows up for a short window each year.

They’ve been foraged and cherished for generations, bringing fresh, vibrant flavor to everything from simple sautés to rich butters, pestos, and soups. If you know, you know… ramp season is something special.
