🍅 Roasted Garden Salsa 🌶

Mild, Restaurant Style
Makes 6-8 cups

5 Large, 12-14 oz Tomatoes, cored
4 Cloves Garlic
3 Large Jalapeños, cored
1 Medium Onion, cut into chunks
1 Bell Pepper, cored and cut into chunks

Place ingredients on a shallow pan, lightly season the top with salt, pepper, paprika, cumin and oregano.

Bake at 400° until the vegetables are fork tender.

Remove from oven, let cool. Once cool remove skins from tomatoes.

Place ingredients in a bowl and immersion blend to your preferred consistency.

You may add cilantro and lime to it at this time.

Meet the family behind Rockin C Farm!

Willie, founder and head of the family. Multi-Generational farmer, with experience in row crops, hay production, cattle production, heavy haul trucking and heavy equipment operating. Willie loves all things farming and machinery related and has a soft spot for antique tractors. He's a big dog lover and always encourages us to bring home more animals. As long as it's not sheep or goats. 😂

Chelsie, co-founder and homemaker. Chelsie is a first generation farmer who comes from the city, born in Idaho and raised around Portland, Oregon. She loves to garden, preserve the harvest, forage for wild edibles, hunt, read and paint. Chelsie will be going into her first year of teaching as the Practical Arts teacher at Round Grove Christian Academy for the 2025-2026 school year. She loves her chickens and her boys.

Jaksen, age eleven will be a 6th grader at Round Grove Christian Academy this year. He enjoys farming alongside his Dad, video games, reading and keeping busy. He's a great student who remains on Honor Roll each year.

Henry, age eight will be a 2nd grader at Round Grove Christian Academy this year. He loves to spend most of his time outdoors and closely resembles Pig-Pen on a regular basis. He enjoys building things from Legos, magnet tiles or really anything he can get his hands on.

At Rockin C Farm it is our mission to bring you home grown and locally sourced vegetables, fruit and plants. We also offer hay hauling, wheat straw, butcher Hogs, farm fresh eggs and more to come in the future!

This little garden contains 20 raised beds of different shapes and sizes.

In this garden we have; tomatoes, green beans - bush and pole, sweet peppers, hot peppers, cucumbers - pickle and slicers, yellow squash, zucchini, honeynut squash, spaghetti squash, luffa, sweet potatoes, dill, cilantro, basil, oregano, onions, Safflower, lemon balm, mint, carrots, lettuce, radishes, asparagus, rhubarb, calendula, nasturtiums, marigolds, parsley, tootheache plant and more.

We companion plant and ignore the spacing rules. The crazy part is, IT WORKS. We have less pests and beautiful harvests.

You're probably thinking, how does this produce enough for a farm stand and a family? The answer is it doesn't, we have a few acres and a greenhouse across the road where we have potatoes, sweet corn, green beans, pumpkins, gourds, tomatoes, peppers, squash, cucumbers and more. Soon we'll have cole crops in too!

We succession plant, plant more that we "need" and pray for a bountiful harvest.

With all of the hard work and prayers we are able to share what we love with you. And what we can't grow we source locally, i.e. the peaches, apples, pears, watermelons, canteloupe, mums and flowers.

Me soaked in sweat and all of my makeup sweat off, "It really isn't that bad today." 😅🥵

All of the dead plants have been removed and we w**ded. Now to w**d around the walls, drive some T posts and plant the next round of plants. We'll be putting in more tomatoes, cucumbers and a few other things to extend our growing season.

💚🌱 Garden update 🌱💚

My gardens aren't "Pinterest worthy". There are w**ds and imperfections. But they are beautiful to me.

I'm grateful to have over 300 healthy tomato plants, around 100 pepper plants, four 300'+ rows of green beans, about an acre of sweet corn (succession planted), dozens of squash plants, cucumber plants, herbs, onions, sweet potatoes and flowers galore. Oh, and a pumpkin patch too! I need to snap a picture of it after the rain.

The raised bed garden will be expanded soon and I'm so excited to add more perennial plants like asparagus, strawberries, blueberries and more to it 🍓🫐

We have been blessed with hundreds of pounds of potatoes and tomatoes. Bushels of cucumbers, squash and green beans. Along with so much more.

Providing my family with nutritious, pesticide free food that we grow from start to finish is something I am passionate about and so blessed to do. I'm happy that I can share my harvests with others.
