For our Lunch Around the World activity this month, we decided to visit the country of Laos. We learned about the land of many thousand elephants and tasted their cuisine. We enjoyed a bowl of red curry noodles also known as khao p**n made with coconut milk. It’s creamy, rich, tangy, and herbal. It was a delicious treat!
