Any avocado lovers out there? High fat foods used to be demonized, but now fat is definitely making a come back and more, especially with the keto diet trend. Avocado is high in fat and calories, indeed, but it totally can be enjoyed as a part of a healthy eating plan š
I love how versatile avocado is! Some ways I enjoy them are:
š Split a small avocado in half, top with pepper, salt, and a squeeze of lemon juice. Use a spoon to scoop out the meat and eat (yay, no extra dishes to wash!).
š Mash 1/3 of avocado on sprouted grain toast. top with sliced tomatoes and any other vegetables of your choice. Add spices, salt and/or pepper to taste.
š Top your salad, soup, or just about anything with cubed avocado pieces.
š Guac!
š Make avocado chocolate mouse.
š Mash/blend into salad dressing to add creaminess.
š Add to your smoothie.
Avocados are:
š High in heart healthy mono-unsaturated fat.
š High in fiber, avocados pack about 1 gram of fiber per 1 tablespoon. š³
š Keeps you satisfied due to the high fat + fiber content.
š High in vitamin E, K, C, potassium, magnesium, folate and B vitamins.
Not sure if there is any truth to this, but my husband swears by long narrow avocado having smaller seed and more meat than a chubby one which tends to have a bigger seed. Any of you find that to be true? How do you enjoy your avocado?
