Chickpea and Spinach Stuffed Sweet Potatoes
Ingredients: For the Stuffed Sweet Potatoes: 4 medium-sized sweet potatoes 1 can (15 oz) chickpeas, drained and rinsed 2 cups fresh spinach, chopped 1 small red onion, finely chopped 2 cloves garlic, minced 1 teaspoon cumin 1 teaspoon smoked paprika Salt and pepper to taste.
For the Avocado Lime Sauce: 1 ripe avocado Juice of 1 lime 2 tablespoons fresh cilantro, chopped Salt and pepper to taste.
Instructions: For the Stuffed Sweet Potatoes: Preheat the oven to 400°F (200°C). Wash the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for 45-60 minutes or until tender. In a pan over medium heat, sauté the chopped red onion until translucent. Add minced garlic and cook for an additional minute. Add chickpeas to the pan, followed by cumin, smoked paprika, salt, and pepper. Stir well and cook for 5-7 minutes until the chickpeas are heated through. Add chopped spinach to the pan and cook until wilted. Once sweet potatoes are done, cut them open and fluff the insides with a fork. Spoon the chickpea and spinach mixture into each sweet potato.
For the Avocado Lime Sauce: In a blender or food processor, combine the flesh of one ripe avocado, lime juice, chopped cilantro, salt, and pepper. Blend until smooth. Drizzle the avocado lime sauce over the stuffed sweet potatoes before serving.
