Potato Leek Soup
Ingredients
- 1 carrot, chopped
- 2 stalks of celery, chopped
- 3 1/2 cups chicken broth (or enough to barely cover potatoes)
- 1 Tsp. dried rosemary
- ¼ cup fresh parsley
- 1 Tbsp. fresh thyme
- 1 clove garlic, minced
- 3 leeks, thinly sliced
- dash red pepper flakes
- salt and pepper to taste
- 2 Tbsp. salted butter
- 1 Tbsp. Worcestershire sauce
- 1 yellow onion, diced
- 8-10 yukon gold potatoes, peeled and cubed

Preparation
Prepare all vegetables. Leeks need extra attention when cleaning as they contain a lot of sand. To properly clean a leek remove the roots and the dark green ends, so just the white and light green part remains. Slice the leek length wise, halfway through, so all of its layers are visible. Rinse under cold water carefully pulling back layers to remove the sand. Shake off excess water and slice into thin discs.In a large pot or dutch oven, melt butter over medium high heat. Saut leeks, onions and garlic for roughly 3-5 minutes until tender. Do not brown the leeks as it will give your soup a burnt flavour.
Add potatoes, carrots, and celery. Cook for an additional 5 minutes stirring frequently.
Sprinkle with parsley, thyme, red pepper flakes, and rosemary, stir to combine.
Pour in chicken broth and season with Worcestershire sauce.Bring soup to a boil and cook for about 5 minutes. Reduce heat, cover and simmer for 25-35 minutes.
Remove from heat.Using a blender, puree soup in batches until smooth. Salt and pepper to taste.

Sweetie Pie Soup
Ingredients
- BUFFALO PEANUT BUTTER
- 3 ¾ cups Tropical Food's Buffalo Nuts®
- 1 tsp. kosher salt
- 1 ½ tsp. honey
- 1 ½ tsp. peanut oil
- SOUP
- ½ cup buffalo peanut butter
- 1 tbsp. peanut oil
- 1 onion, chopped
- ¾ tsp. salt
- ¼ tsp. pepper
- 4 garlic cloves, roughly chopped
- 2-inch piece ginger root, peeled and roughly chopped
- 2 tsp. ground cumin
- ¼ tsp. cayenne pepper
- 1 ½ lb. sweet potatoes, peeled and cubed
- 14 oz. can crushed tomatoes
- 4 cups water
- Sour cream for garnish
- Chives for garnish

Preparation
Place Tropical Foods Buffalo Nuts, salt, and honey into the bowl of a food processor, process for 1 minute. Scrape down the sides of the bowl, place the lid on and continue the process while slowly drizzling in 1 tsp. peanut oil.
Process until smooth.

Simply Bean Soup
Ingredients
- 2 tablespoons Butter
- 1 Small Onion, Chopped
- 2 cloves Garlic, Minced
- 3 15.8s Oz. Cans White Beans, Rinsed and Drained
- 1 tablespoon Fresh Basil, Chopped
- 1 tablespoon Fresh Rosemary
- 1 tablespoon Fresh Thyme
- 1 cup White Wine
- 3 cups Veggie or Chicken Broth
- 1/4 cup Sherry
- Salt and Pepper to Taste

Preparation
Melt the butter in a pan on medium heat.
Add in the onion and garlic and let it cook up for 2 to 3 minutes.
Add in the beans and the fresh herbs.
Next up, add in the wine and broth.
Allow the mixture a few minutes to heat back up and then turn the heat down a notch to medium low.
Smooth out the soup either with an emulsifier or in batches in your blender.
Stir in the sherry and add salt and pepper to taste.

Easy Shrimp Scampi
Ingredients
- 4 tablespoons butter
- 2 tablespoons fresh parsley
- 6 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 pound shrimp, shelled
- 1/2 cup white wine

Preparation
In a large skillet, melt butter and oil.
Add garlic and saute 30 seconds.Stir in wine and lemon juice and cook 1 minute.Stir in shrimp, parsley, salt and pepper. Cook 2-3 minutes over high heat, stir constantly.
Serve with pasta or rice.

Thai Shrimp
Ingredients
- 1 bunch basil leaves, 2 c. leaves
- 8 cups chicken stock
- Hot cooked rice
- 2 tablespoons fish sauce
- 4 green onions
- 1 teaspoon organic peanut oil
- 3 hot red or green chilies
- 8 ounces shrimp, cooked, peeled, and deveined, 51 – 60 per pound
- 2 teaspoons soy sauce
- 1 teaspoon sugar

Preparation
Peel and devein shrimp. Wash, dry and steam basil, mince garlic, thinly slice seeded chilies, mince white part of onion and cut green part into 1 inch pieces. Recipe can be prepared ahead to this stage.
Heat wok over high heat. Swirl oil into wok and heat almost to smoking.
Add garlic, chilies, onions (white part), and cook 10-15 seconds; add shrimp and stir fry 20 seconds or until they change color.
Add fish sauce, soy sauce, sugar, chicken, stock and green part of onions and bring mixture to a boil. Stir in basil and cook 20 seconds or until leaves wilt and shrimp are firm and pink. Dish is supposed to be soupy.
Serve over hot cooked rice.

Shrimp Scampi with Garlic and Lemon
Ingredients
- 3/4 lb (12 oz) raw shrimp, cleaned and deveined
- 3 Tbsp extra-virgin olive oil
- 1/2 tsp kosher sea salt (more as needed)
- 1/4 tsp freshly cracked black pepper
- 1 Tbsp lemon zest
- 1/2 tsp hot pepper flakes
- 1 shallot (or small onion), finely chopped
- 4 cloves garlic, finely chopped
- 1/3 c white wine
- 2 Tbsp butter
- 1-1/2 c chicken/seafood stock (more as needed)
- 12 oz your favorite pasta
- 2 Tbsp chives (or Italian flat leaf parsley), chopped
- 1 Tbsp lemon juice (maybe...taste first before possibly adding more lemon juice)

Preparation
Clean and pat dry shrimp
Toss with 1 Tbsp olive oil (keep remaining 2 Tbsp for later), salt, pepper, lemon zest, and hot pepper flakes
Mix and marinate no longer than 30 minutes. If you marinate for more than 20 minutes, you’ll start making ceviche (another delicious way to prepare shrimp, but that’s not our goal here)
Grab a pan and heat the remaining 2 Tbsp olive oil over medium heat
Add shallots and cook for about 2 minutes
Add garlic and cook for another 2 minutes
Add white wine and cook until reduced by half, about 3 minutes
Add butter and marinated shrimp
Cook shrimp just until they’re pink on the outside...just a couple minutes.
Add chicken stock (or a mixture of chicken and seafood stock)
Add pasta and bring to a boil. Reduce to a low boil and put the lid on.
Once the pasta is al dente, serve and sprinkle with some chopped chives (or Italian flat leaf parsley)
Add lemon juice - only if needed. Taste first.
