Chicken and Vegetable Sopes

Makes 4 servings.
Prep time: 15 minutes
Cook time: 30 minutes

Nutrition information per serving: Calories 250, Carbohydrate 28 g, Dietary Fiber 5 g, Protein 20 g, Total Fat 8 g, Saturated Fat 2 g, Trans Fat 0 g, Cholesterol 60 mg, Sodium 300 mg

Ingredients
1 pound chicken breast, cooked and shredded
1 tablespoon olive oil
1 small onion, chopped
1 bell pepper, chopped
1 cup corn kernels (fresh or frozen)
1 cup diced tomatoes
1 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
4 whole-wheat sopes (pre-made or homemade)

Preparation
1. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper; cook until softened.
2. Add corn, diced tomatoes, cumin, chili powder, and shredded chicken. Cook until heated through and flavors are combined, about 10 minutes. Season with salt and pepper.
3. Warm sopes according to package instructions or on a hot skillet until crispy.
4. Spoon chicken and vegetable mixture onto each sope. Serve warm.
5. This recipe blends traditional flavors with healthy ingredients and is great for a family meal.
