Simple & delish duck salad anyone?
Keeping a variety of veg & protein makes dieting not only just easier, but more likely these good new habits become permanent. Lasting changes are more important that short term success!
Duck salad
80g cooked duck, shredded
Handful of thinly sliced mix colour peppers
Handful of julienne cut or peeled cucumber strips, excess water removed
Handful of thinly sliced sweetheart or white cabbage
Small handful of finely chopped scallion
Small handful of finely chopped coriander
Dressing
2 tbsp white rice vinegar
1 tsp soy sauce
2 small garlic cloves, crushed
1 tsp Biona hot pepper sauce
1 tsp Xylitol
Mix all the dressing ingredients together. Place the duck and vegetables on a plate and add the dressing.
