Few more tips-

Lettuce and Hearty Greens - Lettuce treat like herbs and try and eat asap just because they are so delicate. Hearty greens wash and dry then store wrapped in a towel in a bag in the fridge. If they are really wilted you can trim the bottoms and place them in a jar of water it will bring them back to life.

Sturdy Firm ( Root )veggies - They last about 2 weeks in the fridge just store them separate from greens as the natural gasses they produce will soften them quicker. Save scraps for soups and broths!

Softer veggies (mushrooms, eggplant, zucchini, tomatoes) - store mushrooms in an open paper bag, eggplant and zucchini keep well in an airtight bag, tomatoes keep on the counter they get really soft and lose flavor in the fridge.

Don’t forget about the frozen fruits and vegetables they are so easy to store and contain more nutrients than the produce we buy at the store!

Save this for your next potato roasting! The key is heating up the baking sheets with the oven just like we pre heat our pans for searing and cooking. Crispy outside and fluffy inside. What’s your favorite way to eat a potato 🥔

My client asked me to make them a brownie that they felt good after eating and these are the beauties I came up with! The kids are also obsessed too! Tag your avocado loving bestie! Avocado Brownies

1 ripe avocado
1/3 cup creamy almond butter
1/4 cup maple syrup
2 eggs (room temperature)
1/2 cup coconut sugar
2 teaspoons vanilla extract
1 tsp espresso powder
1/3 cup unsweetened cocoa powder or cacao powder
1/3 cup almond flour
1 scoop chocolate protein powder (Chefdanielle)
1 teaspoon baking soda
¼ teaspoon kosher salt
½ cup chocolate chips

Preheat the oven to 350°F and grease an 8-inch square cake pan with oil.

In a high-speed blender or food processor, combine the avocado flesh with the almond butter, maple syrup, eggs, coconut sugar, and vanilla.

Blend until very smooth.

Now add the espresso, protein , cocoa powder, almond flour, baking soda, and salt. Blend until the mixture is fully incorporated and smooth.

transfer the brownie batter to your prepared cake pan. Sprinkle the top with chocolate chips.

Bake for 15- 18 minutes, until the edges are firm or the center is slightly giggly. Feel free to bake until a toothpick comes out clean I like mine on the gooey side

This cake taste just like spring! Fresh bright light and lemony I love it for breakfast too. Happy baking !

Lemon yogurt honey cake

1 cup vanilla Greek yogurt
⅔ cup olive oil
⅔ cup honey
2 lemons zested
1 tsp vanilla extract
3 eggs
1 cup flour- can use GF if needed
1/2 cup protein powder - or more flour ( Chefdanielle)
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt

Preheat oven to 325°F. Line the bottom of a 9-inch round cake pan with parchment paper.

In a large bowl, whisk together the yogurt, olive oil, honey, and lemon zest. Add the eggs and stir to combine. Add the dry ingredients and stir until the batter is smooth - making sure not to overmix. Just mix until the dry ingredients are JUST incorporated.

Pour the batter to the prepared cake pan, and gently tap on the counter to release any air bubbles. Bake for 40 to 45 minutes until the top is golden brown and a sharp knife or toothpick comes out clean.

I always check around the 35 minute mark just in case because sometimes my oven runs hot.
