Yall 🥺 I was officially diagnosed with ADHD on Wednesday at the age of 41.

I’ve had an idea for about 10 years and my daughters’ doctor and unofficially diagnosed me about three years ago in during each of their screenings… But to officially hear it from my psychiatrist was bittersweet.

I’ve been wondering how different my life could’ve been if I was diagnosed as a little girl. How much further I’ve could’ve gone, scholastically. I guess we’ll never know. But I’m here now. 💛

My Enchiladas Rojas

Salsa Roja Ingredients
8 dried guajillo chiles (stems + seeds removed)
2 chiles anchos
2 cloves garlic
¼ white onion
2 cups water or chicken broth
1 tsp chicken bouillon or salt (or to taste)
½ tsp oregano (preferably Mexican oregano)
1/8 tsp cumin

Soften the chiles by adding them to a medium sauce pan filled with water. Bring to a boil then turn off heat. Let them soak for 10 mins.

Blend softened chiles with garlic, onion, oregano, salt, and soaking liquid. Blend until smooth and strain the sauce through a fine mesh sieve.

Heat a little oil in a pan. Pour in the sauce and simmer for 5–10 minutes until slightly thickened. Taste for salt. Leave on simmer while you fry your tortillas.

Lightly fry tortillas in oil (just a few seconds per side so they don’t break). Drain on paper towels.

Dip each tortilla in the red sauce. Fill with shredded chicken (or cheese). Fold (or roll) enchiladas.

I stuff mine with shredded chicken breast from a rotisserie chicken. I start by stir frying diced potatoes and carrots with a little oil in a pan, till cooked. Add in cooked shredded chicken. Season with a pinch of oregano, cumin and salt to taste. I also pour in a little of the red sauce so it’s not dry.

Finish with toppings of your choice. I like queso fresco, avocado and sliced radish.

Enjoy immediately!

I highly recommend their “Caribe” smoothie made fresh to order at their juice bar. It’s got
Pineapple, Mango, Dragon Fruit,
Organic Blue Spirulina and Vallarta Hass Avocado.

Jordy tried to steal it but ended up happy with her Mango En Fuego smoothie. 🥭 Their aguas frescas are always a safe bet as well, we love agua de sandia 🍉

Mexican Street Corn Deviled Eggs aka Esquite Deviled Eggs 🇲🇽 🥚

8 eggs (hard boiled and separated whites and yolks)
1 ear of corn, cooked
2 tbsp mayo
2 tbsp sour cream
Tajin to taste
2 tbsp cotija (or grated parmesan)
Juice from 1 lime
Chopped cilantro

Extra tajin for dipping the egg whites in.

Start by dipping your egg whites in Tajin and set aside.

In a med bowl combine yolks, mayo, sour cream, Tajin, lime juice, cheese and 3/4 of the corn kernels. Mix until smooth and incorporated.

Fill the hollow in each egg with the mixture. Garnish with the remaining corn kernels, more Tajin, and cilantro.

Keep chill until needed.

On a break from taking my GLP-1 medication so I’m taking advantage and enjoying a keto taco while I can.

My body can’t support high fat while I’m on my medication, nor do I crave it.

My order is on the way and I start again next week after about a 1 month hiatus.
