I have been learning along the way with my readers. Sharing and gaining knowledge about the health benefits of cooking with local, fresh, non-contaminated food has been so eye-opening. I also like to use ingredients that are new to me. It keeps the cooking process exciting and, well, yummy!

So...it's time for me to say goodbye.After 11+ years of blogging, I think it is time for me to move on to my next chapte...

So...it's time for me to say goodbye.
After 11+ years of blogging, I think it is time for me to move on to my next chapter.
Over the past decade, I have learned about social media, met like-minded home cooks, and gained knowledge from a variety of cultures that have influenced me and my cooking.
I have improved my photography skills (my first years were frightful), gained knowledge about so many cooking techniques and flavors, and written 12 cookbooks.
It was a wonderful way for me to make some cash and have a creative outlet while my girls were growing up.
I cannot thank you enough for the community of people that I've met...some very close to my heart...you know who you are.

We found a fun Scandinavian dive bar tonight on a recommendation from a friend. Ambiance is pure dive (most excellent). Food is delicious (think pork belly or venison sliders).
So...on to the booze. Apparently, there is this stuff that is called Jeppson's Malört. Phew. I read a review describing it as “It's like if shame and regret were left to ferment before being distilled through an old, sweaty shoe.". I mean, c'mon, I had to try it. To me it was bitter like a grapefruit rind coupled with "old man." It stuck to the back of my tongue for like 10 minutes. Man. One and done for me!! Skål!!

It's no Portillo's, but I got to have my version of a food flashback! Plus, they were out of giardiniera at Kroger (can't imagine why there was a run on this in Kentucky!?!), but I got some sweet salad peppers instead.

Thinly slice a flank steak (against the grain). Marinate (for a couple of hours) in EVOO, Worcestershire, Italian seasonings, garlic powder, salt, pepper, and a couple of hits of hot sauce. In a skillet, heat meat to desired doneness. Remove meat from skillet, leaving remaining juices. Add 4-5 sliced bell peppers and a thinly-sliced large onion (in half moons). Cook until wiggly (it's probably a little overcooked, but it is super-yummy this way).

I served mine in a bowl, but stuffed some hoagie buns for my family...they also had a slice of provolone (I melted this for them under the broiler for 2 minutes). Garnish with pickled peppers/veggies. Enjoy!

Herbed Pork Chops

So, here's the deal. If you look up what temp pork chops should be, it will say 145*F. But what you may not know is that meat continues to cook while it rests (which is an essential step). Take it up at 135*F, let it rest for 7 minutes, and then serve your perfect pork!

So, this recipe was sprouted from my love of Caprese salads, in all forms. Fusion at its best! Halloumi is a semi-hard, unripened cheese made from a mixture of goat's and sheep's milk, and sometimes also cow's milk. It has a high melting point and can easily be fried or grilled, so it is perfect for the air fryer!
