Let me tell you the best time to use a simmer pot…

It’s the almost-too-late-to-be-up time.
After everyone’s gone to bed.
The kitchen is finally clean, the dishwasher is humming, and you’re in your comfiest PJs.

The Christmas tree twinkles softly in the background.
The house is quiet.
Peaceful.

You put a pot on the stove and let it simmer low, and slowly the whole house fills with that warm, cozy Christmas smell β€” just for you.

No rush.
No chaos.
Just a moment you didn’t know you needed.

Bonus points if you put on a good Christmas movie β€” the kind you’ve seen a hundred times, so it doesn’t matter if you half-watch it.
Lights low.
Tree glowing.

Everyone’s asleep.
