These stuffed peppers are a go-to if you’re looking for something simple, filling, and perfect for meal prep. 25g of protein per serving and super easy to throw together.

Instructions:
Preheat oven to 350° F.
Wrap the green bell peppers in aluminum foil and place in a baking dish. Bake for 15 minutes, then remove from heat.
In a skillet over medium heat, cook the turkey until evenly browned. Set aside.
In the same skillet, heat oil and cook onion, mushrooms, zucchini, red and yellow bell peppers, and spinach until tender.
Return turkey to the skillet. Add diced tomatoes and tomato paste, then season with Italian seasoning, garlic powder, salt, and pepper.
Stuff the peppers with the mixture.
Return to the oven and bake for another 15 minutes.
