Root for your favorite sports team at the in-house Wolf Creek Pub, participate in water aerobics in the Renaissance Wellness Center, participate in a poetry discussion, board a bus for a theater production downtown, or invite your family members to a special holiday event at Carlyle Place. Family members of Residents are encouraged to visit the community often, with special overnight accommodations available for out-of-towners. Residents’ pets are always welcomed, too!

Last week’s four course Tequila Pairing Dinner at Carlyle Place knocked it out of the park!

Special thanks to Executive Chef Marie Carlson, FOH manager and beverage connoisseur Simmi Wall and HC dining manager Austin Cannaday for making this evening such a success!
A delicious and exploratory four course adventure into the wonderful world of tequila cocktails and the dishes that best accompany them. This dinner was designed for everyone. Whether you are an avid tequila consumer, or are just starting the journey, we explored some of the magnificent mixes of this classic libation. Course 1)Colleti Royale- The Margarita meets the Spritz in this citrusy and slightly floral sparkler from Reiner. She tops a mixture of reposado tequila, Cointreau, St-Germain, blood orange and lime juices, and orange bitters with rosé Champagne. Paired with a Charcuterie board with smoky cheeses and meats.
Course 2) El Diablo- This refreshing mid-century classic from Trader Vic's Book of Food and Drink, published in 1946, combines reposado tequila, black currant liqueur crème de cassis, lime juice, and ginger beer. Paired with a blueberry & ginger chicken tacos.
3)Anejo Tequila Old Fashion The toasty notes of a barrel-aged tequila are well-suited to variations on whiskey cocktails like the Old Fashioned. This recipe comes from New York City bar pro Julie Reiner and swaps whiskey for añejo tequila alongside agave nectar and Angostura bitters. Paired With A seared Premium Ribeye , topped with Chimichurri, roasted potatoes with peppers and herbs and candied carrots. Course 4) Green Horn Houston bartender Bobby Heugel was inspired by the flavor combination of agave and melons to create this three-ingredient drink The fruit-forward and gently bitter recipe includes Blanco tequila, bright-green Midori, and gentian liqueur Suze. Paired with key lime pie profiteroles topped with lime zest and powdered sugar with key lime white chocolate mousse!

Carlyle Place residents recently visited Sunshine Berry Farm and Pearson Farms to pick blueberries and cool off with some fresh peach ice cream after enjoying a boxed lunch picnic. It was a beautiful drive in the country and a lovely morning for taking in some fresh air and fresh fruit.
