Healthy Christmas Oatmeal Cake
Ingredients (Serves 4)
For the cake:
2 cups ground oats
1 cup almond flour
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 eggs
½ cup natural honey or maple syrup
½ cup Greek yogurt
¼ cup melted coconut oil
1 teaspoon vanilla extract
½ cup unsweetened almond milk
½ cup chopped walnuts
½ cup raisins or dried cranberries
For the frosting:
½ cup low-fat cream cheese
2 tablespoons honey
½ teaspoon vanilla extract
Handful of fresh red berries and pomegranate seeds for decoration
Instructions (Preparation Time: 30 minutes)
1. Preheat the oven & prepare the cake pan
Preheat the oven to 180°C (356°F).
Grease a round cake pan with coconut oil or line it with parchment paper.
2. Mix the dry ingredients
In a large bowl, combine ground oats, almond flour, cinnamon, baking powder, baking soda, and salt.
3. Mix the wet ingredients
In another bowl, whisk together eggs, honey, Greek yogurt, melted coconut oil, vanilla extract, and almond milk until smooth.
4. Combine wet & dry ingredients
Gradually add the wet mixture to the dry ingredients and mix gently until well combined.
Fold in walnuts and raisins.
5. Bake the cake
Pour the batter into the prepared cake pan.
Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool completely before frosting.
6. Prepare the frosting
Beat together cream cheese, honey, and vanilla extract until smooth.
7. Decorate and serve
Spread the frosting evenly over the cooled cake.
Garnish with red berries and pomegranate seeds for a festive touch.
Extra Tips
Add a hint of orange zest or nutmeg for extra holiday flavor.
For a sweeter cake, add an extra tablespoon of honey.
Serve with a warm cup of tea or coffee for a cozy Christmas treat!
