Found a beautiful Lion’s Mane (Hericium erinaceus) mushroom on Monday in south eastern Indiana with Karen of . Got to cook it up this evening with . Used ‘s recipe for Lion’s mane mushroom “crab cakes”. They came out amazing! I wish I had even more of this mushroom to share with friends.

Lion’s Mane mushroom has historically been used to support the improvement of cognitive function. One result from a study showed lion’s mane helped protect against memory problems caused by the build up of amyloid beta (a substance that forms the brain plaques associated with Alzheimer's disease). It has also been used to promote the alleviation of anxiety and depression.

Do you know the best way to get to know your herbal remedies in a foreign country? Get really sick in a very remote area. I was nursed back to health from food poisoning by and a collection of several local herbs yesterday. This expedited my healing so that today I could enjoy a wonderful day out on Lago Petén Itza today. So good to be out in the sun and swimming and not in a bed sick.
