Who doesn't love a good burrito? Better yet, who doesn't love breakfast for dinner! So let's have the best of both worlds - while staying on track and loosing weight!!

Mexican Beef Egg Burrito

Makes 1 Serving with
1 Lean, 1/2 of 1 Green, and 3 Condiments

2.5 oz 93% lean ground beef, cooked (1/2 Lean)
1 light laughing cow cheese wedge (1 Condiment)
1/4 cup rotel tomatoes or diced tomatoes (1/2 Green)
1/2 tsp taco seasoning (1 Condiment)
1 cup egg beaters or egg whites (1/2 Lean)
1 tbsp chipotle salsa (1 Condiment)
Add cooked ground beef, tomatoes, laughing cow cheese and taco seasoning in a small skillet. Stir until combined over medium heat. Set aside.
Spray a non-stick skillet with cooking spray. Add egg beaters and cook over medium high heat. When one side is done, flip to cook the other side like an omelet.
Place the omelet on a plate. Add ground beef mixture to the center and fold one side over the meat mixture. Then fold the other side over the meat to form a burrito. Top with 1 tbsp of salsa.
Add 2 1/2 Greens such as 1 1/4 cup roasted sweet bell peppers to complete your Lean and Green meal

Stir-Fry Sesame Chicken

Makes 4 servings

Per serving
1 Leaner protein
2 Greens
3 condiments
1 fat

• 2 teaspoons canola oil
• 2 teaspoons sesame oil
• 1/4 cup chicken stock
• 1 Tbs teriyaki sauce, divided
• 36 ounces boneless, skinless chicken breasts, sliced into strips
• 1 red bell pepper, stemmed, seeded, and OR chopped cilantro
• 3 teaspoons sesame seeds

• Toast sesame seeds in a dry skillet over medium heat, stirring frequently. Set aside.
• Coat chicken strips in half the teriyaki sauce. Add oil to a pan or wok over medium heat. Cook for about 4-5 minutes per side until golden and cooked through. Set aside.
• Add green beans and water or chicken stock to the pan. Cover and cook for about 5 minutes, until beans are crisp-tender. Add sesame oil and peppers to the pan with the beans. Cook uncovered for about 4 minutes. Add garlic and remaining teriyaki sauce, cook for an additional 30 seconds.
• Return chicken to pan and add remaining teriyaki sauce. Cook for one minute, until warmed. Remove from heat and sprinkle with toasted sesame seeds. Garnish with scallions or cilantro.

May is mental health awareness month. I talk alot about health and wellness and this is a topic that can not be ignored. Mental health struggles can come in all shapes and sizes. I would love to raise my voice for awareness that when professional help is needed - let’s break the stigma and support those we love.

Mental health is also something that everyone deals with in some extent or another. I would encourage you to take the time to evaluate where you are mentally and then consider what changes you could make to help improve or safeguard your mental health.

That has been one of the biggest impact this community has made on me. Having the support of others around me and being able to cheer others on really helps change my perspective and focus!
