Weekend things! It may be Monday, but I’m still thinking about the weekend. 😎 The weekend included a visit to the Marietta Farmer’s Market, coffee with friends, some tasty veg-forward meals, installing a cattle panel trellis to the garden, took the old jeep out for a ride, and just slooowed down.

Today I’m thinking about my plan for the week, writing goals, and focusing on my WHY! Want to join me? Here are a few thought starters:

I shared this a few months ago, but it popped up for me again as I was looking for something else and I thought it was good enough to share again. It feels particularly helpful at this time of the year when people are focused on making changes. Have you ever heard of the three A’s? Awareness, acceptance and action. These three A’s are key to any lasting change. Are you aware of a problem? Have you accepted the problem as well as your limitations and opportunities for making change? Are you ready to take action? Having a team to help you make lasting lifestyle change might be the missing piece. A registered dietitian can help. 🙂 @

“Nobody wants to meet with a registered dietitian nutritionist during the holidays.” False!

Actually, this is the perfect time to meet with the registered dietitian nutritionist. The holidays are a time when we’re busy, but we’re also beginning to take stock of the current year and plan for next year. If you’re in that boat, this could be the perfect time to meet with a registered dietitian nutritionist to make plans for 2026.

To some of you, this will seem crazy, but I’m ok with that. One of my biggest pet peeves is food waste. In a time where grocery prices are through the roof and people are literally going hungry, I cannot see just throwing away perfectly good food. So, let’s rescue a pumpkin. If you’re swapping out your seasonal decor, consider roasting that pumpkin instead of sending it to the landfill to rot and go to waste. Here are some tips to ensuring that your pumpkin is fit to eat:
🎃 Only save to eat pumpkins that are uncarved and unpainted.
🦠 No rotted pumpkins or pumpkins with soft spots 1 those have already spoiled.
🧽 Always wash the pumpkin thoroughly before you cut it to remove dirt and bacteria from the surface.
🪾Gourds are not edible, which includes the bumpy, scary looking sort.

I’ve read that more than 1 BILLION pumpkins end up in landfills! That’s bonkers. Pumpkin is a great source of vitamin A and also provide vitamin C and fiber among other nutrients. If you can, eat those pumpkins - don’t waste food.

P.S. my neighbor will be getting some pumpkin bread this week. 🎃

Leftover cranberry sauce? Here’s an idea…Yes, you can use it in your leftover turkey sandwich, but I think it’s spectacular in cookies! The tartness of the cranberries is the perfect foil to the sweetness of the brown sugar and white chocolate chips.

I totally made this recipe up, but it worked out to be approximately the following:
Blend together 1 stick softened butter with 3/4 cup brown sugar and 2 eggs. Mix together 1 1/2 cup AP flour with a pinch of salt and 1 tsp baking soda in a separate bowl. Add to the butter sugar mixture and blend until just combined. Add 1 cup chopped pecans, 1 1/2 cup rolled oats, 1/2 cup white chocolate chips and mix just until combined. Fold in 1/2 cup cranberry sauce. Bake at 350 degrees for 12 minutes or until golden.

If you make these cookies, lmk what you think! They’re a big hit over here.
