Cauliflower, Broccoli and Lemon Salad

This nutritious, cauliflower, broccoli and lemon salad is the perfect accompaniment to meat, especially lamb or fish. The lemon dressing is super fresh and mat hes with fish and other meats super well. I love this because it is very simple to make, can be pre-prepared for dinner and it’s great for entertaining a large group too.

What’s so healthy about this easy to prepare salad?
Well, the phytochemicals in cruciferous vegetables are potent antioxidants and are known to prevent various types of cancer, as well as playing a role in the prevention of heart disease. They are also very nutritious, containing a multitude of vitamins and minerals. Almonds contribute health promoting minerals, protein, and good fats. The zest and lemon juice will support a healthy immune system. Another simple ‘super’ food recipe to compliment your meal.

The dressing, almonds, and feta are often enough to convert fussy children too. It takes boring old vegetables to another level!

Health benefits
Gelatin is made from the bone and connective tissue of animals that has been dried and turned into a powder.

The biggest benefit of eating Gelatin, in my opinion, is that it is a gut healer, which means better nutrient absorption (so greater nourishment) all round. Also, if your gut is functioning well, then your nervous system is better supported too. Gelatin also reduces inflammation, improves joint integrity and for the vain amongst you – it improves the condition of your skin, hair and nails. In fact, it’s said to be better then botox (and erase wrinkles, stretch marks and cellulite) – now I’ve got your attention!

My family love soups. They are great in hot oe cold weather and perfect for quick lunches and offschedule meals.

This divine, nourishing Creamy Vegetable Soup (with crunchy chickpeas) is a protein rich meal or starter. It’s loaded with fibre, good fats, liver and gut loving veggies and it tastes so creamy and delicious. The chickpeas add in lovely flavour and texture and also form a complete vegetarian protein with the cashews.

The curry flavour is very mild, almost unnoticeable but it adds a real depth of flavour (and lots of goodness) that just works beautifully with the cheesiness of the nutritional yeast. There’s so much to love in this wholesome soup.

Chicken Bacon and Vegetable Meatloaf
This is one of my family's favourites.
It serves the 5 of us perfectly with some steamed vegetables on the side.
It works great as leftovers.
It also freezes well uncooked. I often make two, and put one in the freezer.
Health benefits
This a lovely balance of protein, carbohydrates (vegetables) and dietary fibre in one very tasty meatloaf.
