Hi, I’m Tara, a wife, athlete, and mom who has been navigating life with Alpha-Gal for the past 5 years. Bit by a Lone Star tick in Oklahoma in August 2019, I went through many months of hives, severe gastrointestinal distress, and many episodes of near anaphylaxis before being diagnosed with Alpha-Gal. At that time, the allergists and doctors were not well-informed and I had to do much of the r

esearch myself and through the small Alpha-Gal community. I personally, know how scary and desperate I felt going through this condition alone, and advocating for myself when the traditional medical community was of little help. Through the help of holistic practitioners, a brand new diet, and seeking out answers, I was able to find a lifestyle that I was able to thrive in.

It’s ridiculous how much I’ve been missing cheese for almost 6 years with Alpha-Gal. So for Mother’s Day my family treated me to some actual delicious tasting vegan cheese .cheese. It’s a bit pricey but it was sooo nice to eat cheese that tasted like cheese again!!!! I tried the smoky Cheddar and spicy pimento. Sooo good I almost shed a tear. I paired it with an avocado toast for dinner with turkey sausage and mini-charcuterie board for lunch. .cheese can you sponsor me so I can eat more of your amazing cheeses?.

My friends the and
recommended some supplements to help me with my overall inflammation levels. I do my best to explain them here, and my daughter Tenley just stares deadpan into the camera, she’s a hoot. I’ve been on the supplements for a month or so and I have seen some small improvements. And with alpha-gal, any improvement is a small victory for me. When taking any supplements, make sure you are getting vegan capsules.

I was really craving a smashburger so this was close enough to hit the spot with sautéed mushrooms, onions, an impossible hamburger, chao creamery shreds, and Aldi’s protein bread (which btw is really tasty). Top with some bread and butter pickles and mustard and I almost convinced myself it was the real thing.

These are so amazingly delicious! Just pick your favorite vegan peanut butter, add plant-based protein and collagen powder, and syrup or honey, and make into little balls. Freeze them for two hours, melt some dairy-free chocolate with some coconut oil, dip your frozen peanut butter balls in the chocolate and then add some chopped pecans and more chocolate drizzle. Sooo good.

Hopefully this can help some of you just diagnosed with alpha gal. Also, feel free to share with friends and family to spread awareness. I know I felt very alone, a bit desperate, uninformed and even depressed when I first got diagnosed. This community needs to help each other and share hope, support and knowledge about this condition. But on a good side note, look at those beautiful ceilings my husband did for me in our new house. I’m in love!!!

If you are in the southern Illinois area, take a visit to the Good Life Health and Nutrition Co in Marion! They are packed with all kinds of goodies for everyone. Also, the new owners, my good pals, the are knowledgeable about Alpha-Gal and supplements to help support your health. They have assisted me in starting a new vitamin regimen and I’m hopeful it gets me feeling better again. After another round of Covid and some hormonal changes, I have had a lot of histamine reactions, body aches, fatigue, and brain fog this winter. I’m ready to get feeling better again!
I’ll share some more soon about each individual supplement and how it can help people with Alpha-Gal.

We’ve been a bit busy around here! We sold our house, renovated the new house in the country then had to move in the middle of a blizzard with 12 inches of snow. (Pic before most of the snow.) So I’ve been eating a lot of whatever is available to me and quick to make and not documenting it, haha. But things are finally starting to slow down this week, if you are close to Paducah, KY I highly recommend for delicious vegan treats and their meals are excellent as well!

I’m a busy mom of two and it’s Christmas season, and I need fast healthy lunches to keep me going through the plays, presents, and elf duties. 🤪 This one is about as simple as they come: sauté some fresh shrimp on a skillet with garlic and olive oil, make some white rice, cut your avocado and add some crispy onions, hot sauce, and yum yum sauce. (Double check all ingredients, especially if you are newly-diagnosed with alpha-gal.) It’s really delicious, not boring, and a new favorite for me.

If you are like me, I’m tired from the holidays but I still want a warm-tastes like homemade cinnamon muffin that is dairy-free. This mix is actually easy enough for my 9-year-old to handle solo. (The only downside: it does contains natural flavors—if you are newly diagnosed or highly reactive, I would NOT recommend this mix.)

Thank you in Gulf Shores, Alabama for having a variety of vegan doughnuts! Sometimes having to be dairy free can kick my butt, but finding vegan dessert options on vacation is simply amazing! Check these guys out for an alpha-gal friendly dessert.
