I want to tell you a little bit about my why. Why I choose to focus on nutrition, and why culinary nutrition is the way I express this focus. Food is my passion, but it hasn’t always been easy.
This chia pudding recipe is extra special for me to teach and share. I learned this recipe about 15 years ago from a naturopathic student. It was special then and is still close to my heart because it was the first time I had told a healthcare practitioner that I couldn’t eat - so she offered me a recipe and listened carefully. There was no judgement, and she simply believed me.
I’m pretty sure I thought the recipe was magic at the time, when it was really just a step toward consistency. Yes the recipe offers packed nutrition which I desperately needed at the time, but it was the idea that I could go home that very day: and do something for myself. That’s what I needed, something to get my mind excited about the idea of food again. I knew how to cook, I had years of experience with food, but it was my nervous system that had collapsed. And food was my answer, and continues to be to this day.
It’s been a lot of hard work to continue habits on days where I don’t see real food around me, or when stress gets real. That’s when I stick to the basics, the safe foods. Chia pudding, was like a sign of resilience back then which is why I continue to share this simple recipe to this day.
