EGG BAKE! Yes, that is 2 large pans of egg bake…For 2 people!

No, we do not have that big of appetites. 🤣

One will be going in the freezer, and the other one is brunch for the next few days.

If I’m making one, why wouldn’t I spend a little extra time and make 2?

Planning ahead saves me time, stress, and keeps me healthier.

It can be a deal breaker when it comes to eating healthier.

Tips:

🥚 Add in extra egg whites instead of all eggs.
🥚 Add cottage cheese for creaminess and added protein.
🥚 Add in lots of vegetables! I use frozen varieties plus mushrooms!🍄‍🟫
🥚 Use an all natural meat if you are adding it.
🥚 I use potatoes instead of bread for substance.
🥚Regular cheese should be limited.

Out of the products listed below, how many do you use in “home-made recipes”? ✅

- cans of soup (cream soups, tomato, etc) 🍲
- crackers
- breads/buns 🥖
- jars of sauce (pasta, pesto, gravy, etc)
- salad dressings
- bouillon, stock powders
- puff pastries, dough
- pre-made mixes (cake, pancake, brownie, etc)
- sausages, processed meats
- American cheese/liquid cheese, Velveeta, etc.
- chips
- packaged drinks 🥤
- milk chocolate 🍫
- chicken nuggets
- frozen pre-made meals
- cereal 🥣
- pasta 🍝

This list is some of the top ultra processed foods on the market today. 😮

If you use any of these items to make a home-made meal, all of a sudden it isn’t so healthy anymore. 😬 Taking any of these items will turn healthy foods into a poor meal.👎🏻

Be careful on your food choices and try to make everything from scratch when cooking at home. 🍽️

🍤 SHRIMP MANGO BOWL. I found some tasty mangos 🥭 in the store today, so this is what I came up with for dinner tonight….

Ingredients.

🍲 Wild caught shrimp 🍤(coconut aminos, ginger, red pepper flakes)
🍲 Quinoa/brown rice/flax seed 🍚
🍲 Roasted sweet potatoes 🍠
🍲 Roasted broccoli 🥦, cauliflower, carrots 🥕, peppers 🌶️
🍲 Fresh mango 🥭
🍲 Fresh mango salsa
🍲Sweet chili sauce (just a bit)

And, I forgot my avocado 🥑, so be sure to add that as well! 🤦🏻‍♀️ There’s always tomorrow’s leftovers. 😋

Don’t like my vegetables? Don’t sweat it, just use the ones you like! Make it your own.👍🏻

Why is breakfast so bad at American airports?! It isn’t very often you can find vegetables or plants on the breakfast menus. (At Terminal 1 MSP - they have a People’s Organic which is amazing!!!)

What do I do? I bring homemade protein balls with me. Add a piece of fruit, and I’m good to go!

The poor guy eating this breakfast doesn’t seem to be enjoying it much. 🤮

🥗 SALAD HATERS NO MORE! Hate salads but want to eat better? I got you! 😉

You can eat salads without the typical “salad” ingredients. The important thing to remember is to include healthy proteins and healthy fiber!

This Mexican bowl has 47g of protein and 10g of fiber. 👍🏻👍🏻

And no greens!🥬

Yes, greens are good for you, but if you don’t like them, don’t worry. Just find your fiber in other plants.🌱

Here is what I added to this bowl:

100% grass fed lean ground beef (90%)
Brown rice/quinoa/black beans 🫘
Cottage cheese 🫕
Red onion 🧅
Mixed peppers 🌶️ 🫑
Cherry tomatoes 🍅
Guacamole 🥑
Salsa (sugar free!)

Key take-aways:
🥗 protein & fiber!
🥗 cottage cheese instead of sour cream
🥗 don’t forget the beans!
🥗 colorful vegetables (whichever ones you like)
