Apple Spinach Salad for Memory Support
Ingredients:
• 6 cups baby spinach
• 2 apples (Pink Lady and Granny Smith), thinly sliced
• ½ small red onion, thinly sliced
• ½ cup walnuts or pecans, toasted
• ⅓ cup dried cranberries
• ⅓ cup crumbled goat cheese (or feta)
Apple Cider Vinaigrette:
• ⅓ cup olive oil
• 2 tbsp apple cider vinegar
• 1 tbsp honey
• 1 tsp Dijon mustard
• 1 clove garlic, minced
• Salt and pepper to taste
Instructions:
✔️ Whisk vinaigrette ingredients until smooth.
✔️ In a large bowl, toss spinach, apples, onion, nuts, cranberries, and half the cheese.
✔️Drizzle with dressing and toss gently.
✔️Top with remaining cheese and serve.
