Craving the flavors of Greece? 🇬🇷 Fire up your grill and try this week’s : Chicken Souvlaki with creamy, homemade Tzatziki Sauce! 🍗✨
Ingredients:
For the Chicken Souvlaki:
- 2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- Wooden/metal skewers (soak wooden skewers in water for 30 mins)
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1 cucumber, grated & squeezed to remove excess water
- 2 garlic cloves, minced
- 1 tbsp fresh dill, chopped (optional)
- 1 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp salt
Directions:
1️⃣ Prepare the Marinade: Whisk olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper in a large bowl. Toss in the chicken to coat evenly. Marinate for at least 1 hour or overnight.
2️⃣ Tzatziki Sauce: Mix yogurt, grated cucumber, garlic, dill (optional), olive oil, lemon juice, and salt. Chill in the fridge until serving.
3️⃣ Skewer Time: Thread the marinated chicken onto skewers.
4️⃣ Grill: Preheat grill or grill pan to medium-high heat, oil lightly, and cook skewers for 8–10 minutes, turning occasionally, until golden and fully cooked (internal temp of 165°F).
5️⃣ Serve: Pair skewers with warm pita, fresh veggies, feta cheese, and a generous scoop of tzatziki.
