Hey friends! 🌞 Today, I’m excited to share one of my go-to healthy recipes that’s super simple yet absolutely delicious—a grilled salmon with lemon-caper butter sauce! 🍋🐟

This dish is perfect for those evenings when you want something light but still full of flavor. I love how the tangy lemon and briny capers in the butter sauce complement the rich, flaky salmon. It’s a match made in heaven!

To keep things on the healthy side, I like to pair this with a fresh quinoa salad. I mix in some cherry tomatoes, cucumber, a bit of red onion, and toss it all in a light lemon vinaigrette. It’s the perfect side that adds a nice crunch and keeps the meal balanced.

Here’s how I do it:

Grill the Salmon: Season your salmon fillets with a bit of salt, pepper, and a drizzle of olive oil. Grill them for about 4-5 minutes on each side until they’re cooked through and have those beautiful grill marks.

Make the Sauce: In a small pan, melt a tablespoon of butter, then add fresh lemon juice and a spoonful of capers. Let it simmer for a minute, and it’s ready to drizzle over your salmon.

Hey, Wellthy Path fam! 🙌 It’s finally Friday, and you know what that means - it’s time to relax, recharge, and treat ourselves to something that makes us feel good inside and out! 💚

There’s something special about Fridays, right? The weekend is just around the corner, and it’s the perfect time to slow down a bit, enjoy a delicious meal, and nourish our bodies with food that makes us feel AMAZING! 🍽️

I always love this part of the week because it’s my little reminder to pause and appreciate the simple things - like sharing a healthy, comforting meal with loved ones or just taking a moment to savor something wholesome and satisfying. 🍉 Why Watermelon is My Go-To Snack 🍉

Hey Wellthy Path fam! 👋 I just HAVE to share my love for watermelon with you all. It’s one of those snacks that’s super refreshing, especially on a hot day 🌞.

Here’s why I always keep a big bowl of it in the fridge:

-Hydration hero 💧: Watermelon is packed with water (hence the name, right? 😉). It helps keep me hydrated and gives me that much-needed energy boost.

-Low-calorie, high satisfaction 🥳: It’s crazy how something so sweet can be so low in calories! I can snack on it guilt-free, knowing I’m nourishing my body with vitamins and antioxidants.

-Cravings crusher: Whenever I’m craving something sweet, I grab a slice of watermelon. It satisfies my sweet tooth without all the sugar that comes with other snacks.

I love chopping up a fresh watermelon, storing it in the fridge, and grabbing a handful whenever I need a little pick-me-up. If you haven’t added watermelon to your snack rotation yet, I highly recommend it! 🍉💚

🌿 Creamy Pasta with Roasted Veggies & Arugula 🌿

Hey Wellthy Path fam! 👋 Ready for a tasty yet light pasta dish? This creamy pasta with roasted veggies and fresh arugula will hit the spot! 💃

🍽️ Ingredients:

8 oz pasta (penne or casarecce)
1 cup cherry tomatoes, halved 🍅
1 cup roasted veggies (mushrooms, squash, etc.) 🍄
2 garlic cloves, minced 🧄
1 cup heavy cream (or coconut cream) 🥥
1/4 cup grated Parmesan 🧀
Handful of fresh arugula 🌱
Salt, pepper, and olive oil 🫒

🌟 Steps:

Roast the veggies: Preheat oven to 400°F. Toss veggies in olive oil, salt, and pepper, and roast for 20 mins until golden.

Cook pasta: Boil your pasta and save 1/2 cup of pasta water before draining.

Make the sauce: Sauté garlic in olive oil, add cream, and simmer for 2-3 minutes. Stir in half the Parmesan until smooth.

Mix it all: Add roasted veggies, tomatoes, and pasta to the sauce. If it’s too thick, add a splash of pasta water. Season with salt and pepper.

Finish & serve: Top with fresh arugula and the rest of the Parmesan. 🌿

🥑🍳 This morning, I just tried something so simple yet so delicious for breakfast (or even lunch)! Today, I made smoked salmon and poached egg on toast with a side of avocado toast, and it was AMAZING. 😋

• 1 grapefruit
• 1 carrot
• A small piece of turmeric (about an inch)
• A splash of coconut water (optional)

Peel the oranges and grapefruit, and blend them with the carrot and turmeric. Add a splash of coconut water if you like it a bit lighter. This juice is packed with antioxidants and will give you that bright, sunny morning feeling!
