Make your own homemade strawberry cupcakes healthily with Stevian Forte ππ§. All you need is:
8 large fresh strawberries or as needed.
2 eggs.
1 1/2 teaspoon Stevian Forte.
1/3 cup vegetable oil.
1/2 teaspoon vanilla extract.
1/2 teaspoon lemon peel.
1 1/2 cups all-purpose flour.
2 teaspoons baking powder.
1/4 teaspoon salt.
3 tablespoons instant vanilla pudding mix (optional).
1 drop of red food coloring, or as needed (optional).
3/4 cup cream cheese, softened.
2 tablespoons butter, softened.
1/2 teaspoon vanilla extract.
3 large fresh strawberries, sliced.
Preheat oven to 325Β° F (165Β° C.) Spray the cupcakes molds with cooking spray or cupcake liners. ππ§
Place 8 strawberries in a blender and blend until soft. Pour the puree through a strainer to remove the seeds. ππ§
In a large bowl, whisk eggs, Stevian Forte, vegetable oil, 1/2 teaspoon vanilla extract, lemon zest, and strawberry puree together until well combined. Add the flour, baking powder, salt, vanilla pudding mixture, and red food coloring to achieve the desired shade of pink. Place dough in prepared cups of cupcakes, filling each cup approximately 2/3 of its capacity. ππ§
Bake in the preheated oven until the cupcakes have lifted and a toothpick inserted in the center of a cupcake comes out clean, about 23 minutes. Allow them to cool for at least 10 minutes before glazing. ππ§
To make the glaze, beat the cream cheese and butter in a bowl with an electric mixer until smooth, and mix with sweetener and 1/2 teaspoon vanilla extract to make a smooth glaze. Frost each cupcake with about 2 tablespoons of glaze, and cover each one with a slice of strawberry. ππ§
