Heart-Healthy Lentil & Vegetable Soup
Ingredients:
- 1 cup dry lentils (rich in fiber and plant protein)
- 1 tbsp olive oil (heart-healthy fat)
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp turmeric or curry powder (anti-inflammatory boost)
- 4 cups low-sodium vegetable or chicken broth
- 2 cups fresh spinach or kale
- A squeeze of lemon juice before serving
Directions:�
1️⃣ Sauté onion, garlic, carrots, and celery in olive oil.�
