🌟 Pomegranates are awesome! There are so many ways to enjoy this fruit, and here’s a delicious shrimp taco recipe to get you started. 🌮
Ingredients:
- 1 medium avocado
- 1/4 cup plain low-fat yogurt
- 1 teaspoon garlic
- 3 limes, quartered
- 2 teaspoons salt
- 1/2 cup black beans
- 1/4 cup chopped red onions
- 1/2 cup pineapple
- 1/4 cup pomegranate seeds
- 2 tablespoons cilantro
- 3 tablespoons corn
- 1 medium Roma tomato
- 2 cups shrimp
- 2 cups shredded cabbage
- 8 corn tortillas
- 2 teaspoons taco seasoning
Steps:
For the Avocado Sauce:
1. Mash the avocado in a bowl and mix with plain yogurt.
2. Add garlic and 1 1/2 teaspoons of lime juice.
3. Refrigerate until assembling.
For the Salsa:
1. Rinse black beans if using canned.
2. Cut and remove pomegranate seeds.
3. In a bowl, mix pineapple, black beans, red onions, tomato, pomegranate seeds, cilantro, and corn.
4. Toss with salt and 2 teaspoons of lime juice until well coated.
For the Shrimp:
1. Sauté shrimp in a hot pan, tossing with taco seasoning.
Assemble the Tacos:
1. Warm the corn tortillas.
2. Layer with shredded cabbage, shrimp, salsa, and a dollop of avocado sauce.
3. Squeeze fresh lime juice over the top.
