Need some new and healthy breakfast ideas? Try this one out! Sweet Potato and Apple Sausage Breakfast Skillet is fresh and full of flavor 🍠🍠

Ingredients:
* 1 Tbls Avocado Oil or oil of choice
* 4 Links Chicken Apple Sausage, sliced
* 1 Sweet Potato, peeled and diced
* 1/4 cup onion, diced
* 1 green apple, diced
* 2 cups spinach, fresh
* 1/4 tsp sea salt
* 1 lemon

Instructions:
1. Heat the oil in a large skillet over medium heat and brown the sliced sausage, then remove from pan.

2. Add in the sweet potato, salt and onion and cook for about 10 minutes, stirring occasionally. You want to get a little color on the sweet potato and it should be just starting to get tender

3. Then add in the diced green apple and spinach. Continue to sauté until spinach is wilted and potatoes are tender.

4. Stir in the cooked sausage and lemon juice
Taste for seasoning and serve.

Ingredients:
* 3 cups cherry tomatoes, quartered
* 1 cup green, red and yellow peppers, chopped
* 2 medium cucumbers, peeled, seeded; chopped
* 1 jalapeno pepper, seeded & chopped
* 1 small onion, chopped
* 1 clove garlic, minced
* 4 tablespoons lime juice
* 1 teaspoon fresh parsley, minced

Mix all ingredients together in a large bowl and enjoy!

Are you needing a nice fresh and healthy meal for these summer nights? Try out this Fish Taco Recipe with Lettuce Wraps! 🥬🥬

Ingredients:
* ¼ purple cabbage, shredded
* 1 medium jicama, peeled and grated
* 2 red, orange, or yellow bell peppers, sliced or diced
* 1 red onion, diced
* ½ bunch fresh cilantro, chopped
juice of 4 limes
* 1½ pounds cod, halibut or mahi mahi
* 2 teaspoons cumin
* 2 teaspoons garlic powder
* 1 teaspoon cayenne or chipotle (optional)
* 1 tablespoon coconut oil
* 1 head romaine or butter lettuce, washed and separated

Avocado Cream Sauce:
* 1/4 cup cashews (soaked for 20 minutes before)
* 1/3 cup lime juice
* 2 cloves garlic
* 1/4 teaspoon salt
* 1 jalapeno (optional)
* water to blend
* 2 ripe avocados

Instructions:
1. Start by preparing all of the vegetables. In a medium bowl, toss the cabbage, jicama, bell peppers, onions and cilantro. In a medium bowl, toss the vegetables with the lime juice. Set aside.

2. Chop the fish into bite-sized pieces and place it in a shallow dish. In a small bowl, mix together the cumin, garlic powder and cayenne or chipotle if desired. Sprinkle the spice mix evenly over the fish and set it aside to allow it to marinate while you make the Avocado Cream Sauce.

3. Add the drained cashews, lime juice, garlic, salt and jalapeño to a high-powered blender and blend well, adding only enough water to facilitate blending. Add the avocados and puree. Transfer the sauce to a serving bowl.

4. Heat a medium skillet over medium heat. Add the coconut oil and then the fish. Cover and cook 5–7 minutes, stirring every few minutes to ensure the fish is cooked on all sides. Remove the fish to a serving bowl.

5. To construct the tacos, start with a lettuce leaf, add fish and veggie toppings, and finish with avocado cream sauce.

Enjoy!

KETO-friendly smoothie recipe! If you're trying the Keto diet here is a great recipe for a breakfast (or snack) smoothie. This tasty smoothie is full of fresh ingredients including avocado, chia seeds, and cacao. Even if you're not going Keto, this is still a great option for a healthy smoothie! 🥤
Ingredients:
* 1–1¼ cups full-fat coconut milk
* ½ frozen avocado
* 1 tablespoon nut butter of choice
* 1 tablespoon chia seeds, soaked in 3 tablespoons of water for 10 minutes
* 2 teaspoons cacao nibs, cacao powder or cocoa powder OR 1 scoop of chocolate protein powder made from bone broth
* 1 tablespoon coconut oil
* ice (optional*)
* for topping: cacao nibs and cinnamon
* ¼ cup water, if needed
Directions:
Add contents into a high-powered blender, blending until well-combined.
Top with cacao nibs and cinnamon.
Enjoy!

Are you wanting to try something different and refreshing as we get into the summer? You've got to try these Frozen Yogurt Fruit Cups! They are so tasty and everyone in the family will love them! 🍓🫐🥝
**Also Vegan Friendly and Gluten-Free 😃

Ingredients:
* 1 cup oats
* 1/4 cup natural peanut butter
* 1/4 cup maple syrup
* Dairy-free yogurt
* Strawberries
* Mango
* Kiwi
* Blueberries
* Pomegranate

Instructions:
1. Start by cutting up the strawberries, mango, and kiwi into small pieces. They will be the topping for your fruit cups.

2. In a large bowl, combine the oats, peanut butter, and maple syrup. This will be your granola base.

3. Line a muffin pan with muffin liners. Add about 1-2 tablespoons of the dairy-free yogurt to each cup.

4. On top of the granola, add 3-4 heaping tablespoons of the dairy-free yogurt to each cup.

5. Top off the fruit cups by adding the fruit.

6. Place the cups in the freezer for at least 2 hours.

Enjoy!!
