1/2 head of both green and purple cabbage shredded in food processor. 2 cups thinly sliced carrots. 1 cup chopped parsley. 1/2 cup green onions. 1/2 cup pepitas. 1/4 cup slivered almonds. Dressing:
3 tbsp EVOO
2 tbsp apple cider vinegar
2 cloves minced garlic
1/2 tsp salt (optional)
Mix all ingredients except a the nuts and pepitas. Add when ready to eat!

My salad hack, shhh…buy a bagged salad kit as your base. Add in cucumbers and micro kale for a nutrient boost. Add minced shallots (any onion family would do). Sprinkle some feta and Italian spices for that restaurant-salad flare. Finally add my favorite lemon vinaigrette for the finish! DM me if you want dressing recipe??

Whether you need gluten free or need to watch blood sugars, I’ve been digging these GF tortillas and having fun with them in the airfryer. Here’s a quick easy meal idea: air fry tortilla for about 4-5 minutes on 375. It gets nice and crispy. Add your protein of choice- turkey slices shown here- add some avocado for a plant-based superfood fat source. This combo creates a well balanced meal that feels like a sandwich but actually has minimal carbs and 11g protein. The added avocado is yet another blood sugar balancer to help you stay satisfied. Having trouble with #2? Try my “get going” concoction. Take 3-4 prunes and dissolve them in a glass of water overnight or at least 3-4 hours. Next add water and prunes to a high power blender. Add some frozen berries (about 1/2 cup). Blend til everything is mixed well. Pour back in the same glass you used for pruning. Now drink all gone! See if that helps! 💯💪🏼
