1/2 head of both green and purple cabbage shredded in food processor. 2 cups thinly sliced carrots. 1 cup chopped parsley. 1/2 cup green onions. 1/2 cup pepitas. 1/4 cup slivered almonds. Dressing:
3 tbsp EVOO
2 tbsp apple cider vinegar
2 cloves minced garlic
1/2 tsp salt (optional)
Mix all ingredients except a the nuts and pepitas. Add when ready to eat!
