Did Anyone Say Pizza?

INGREDIENTS
3 large chicken breasts cooked, shredded or diced
1 oz pepperoni diced (about 15 slices)
1 ½ cups pizza sauce (I use Rao’s)
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon red pepper flakes
1 cup shredded mozzarella (4 oz)
2 tablespoons grated Parmesan
Toppings:
¾ cup shredded mozzarella (3 oz)
1 ½ oz pepperoni (about 20 slices)

INSTRUCTIONS
Preheat the oven to 400 degrees F. Lightly grease a 2-quart casserole dish.
In a large bowl, mix together the shredded chicken, diced pepperoni, pizza sauce, spices, 1 cup mozzarella and Parmesan.
Transfer the mixture to the prepared baking dish.
Top the casserole with the remaining cheese and the pepperoni slices.
Bake until the casserole is heated through and the cheese is melted, about 15 minutes.
Allow to rest for 5 minutes before serving.

What's for Dinner....Chicken and Broccoli?

Ingredients
2 large chicken breasts, cut on lengthwise about 8 oz each
Kosher salt and ground pepper to taste
1/4 tsp garlic powder
1 tbsp olive oil
2/3 cup chicken broth
1 cup milk of choice
1 tbsp gluten free flour
2 tbsp Dijon mustard
1 tbsp honey
1/2 tsp chili flakes optional or to taste
1 medium head broccoli
2 tbsp fresh parsley chopped

Instructions
Heat 1 tablespoon of olive oil in a large pan over medium heat.
Season the chicken with salt, pepper and garlic powder.
Cook the chicken for about 4-5 minutes per side, or until golden brown. Set aside on a plate and cover to keep warm.
Meanwhile, in a small bowl whisk the flour with almond milk until it is fully combined.
To the same preheated skillet, add the chicken broth. Let it simmer for a couple of minutes, then add the almond milk mixture, Dijon mustard, honey and chili flakes, if using. Whisk until the sauce is smooth and creamy.
Once the sauce has thickened, add in the chicken and broccoli. Continue to cook for 8-10 minutes, or until the chicken is fully cooked through and broccoli is tender.

Zucchini Lasagna:

Ingredients
2 to 3 firm zucchini, sliced lengthwise, 1/4-inch thick (you will need 12 slices)
1 bag (10 ounces) baby spinach
1 1/2 cups fat free ricotta cheese
1/2 cup finely grated Parmesan cheese
1 egg, lightly beaten
2 to 3 cloves garlic, minced
1/2 teaspoon Italian seasoning
salt and fresh ground pepper, to taste
2 cups tomato sauce/marinara sauce
3/4 cup shredded Part-Skim Mozzarella Cheese
2 tablespoons thinly sliced fresh basil

Instructions
Preheat oven to 350F.
Spread 1/2 cup marinara sauce on the bottom of a 9 x 9-inch baking dish. Set aside.
Slice the zucchini, lay them flat on a baking sheet or any other flat surface, sprinkle with salt, and set aside for 15 minutes.
Spray a skillet with cooking spray and set over medium heat.
Add spinach to the skillet and cook for 2 minutes, or until wilted.
Remove spinach from skillet and let cool for a couple minutes.
In a medium bowl, combine prepared baby spinach, ricotta, Parmesan, egg, garlic, Italian seasoning, salt, and pepper; mix until thoroughly combined.
Lay out the slices of zucchini on a cutting board (or any other working surface), wipe them down, and place a spoonful of the ricotta mixture on top of each zucchini slice.
Roll up and transfer to the prepared baking dish, seam-side down.
Repeat with remaining zucchini and ricotta mixture.
Spoon marinara on top of the zucchini, and sprinkle all over with mozzarella cheese.

Salmon Recipe

INGREDIENTS

4 boneless salmon fillets
2 tbsp unsalted butter - melted
2 cloves minced garlic
2 tbsp honey
½ tsp dried parsley - (or 2 tsp fresh parsley, finely chopped)
¼ tsp salt
¼ tsp pepper
pinch of paprika
1 lemon sliced into half-moons

INSTRUCTIONS

Preheat the oven to 200C/400F. Line a baking tray with foil or a silicon mat.

Place the salmon fillets, skin-side-down on the baking tray.
In a small bowl, mix together the melted butter, garlic, honey, parsley, salt, pepper and paprika.
Pour the mixture over the salmon fillets (don't worry about any of the sauce pooling on the tray).
Arrange the lemon wedges on and around the salmon.
Place in the oven and bake for 8 minutes.
