Happy first full week of Fall! 🍁 As the temperatures drop, it's the perfect time to cozy up and nourish your body from the inside out. We often talk about how good nutrition is a vital part of a healthy spine and nervous system. Ready for a recipe that's as comforting as it is healthy?

Our Fall Favorite: The Immunity-Boosting Carrot Ginger Soup! This soup is packed with anti-inflammatory ginger and beta-carotene for a healthy immune system. Plus, it's easy on your digestion!

Ingredients:
1 tbsp olive oil
1 medium yellow onion, chopped
4 cups carrots, chopped
4 cups vegetable or chicken broth
2 inches fresh ginger, peeled and chopped
1 can full-fat coconut milk
Salt and pepper to taste

Instructions:
Sauté onion in oil until soft.
Add carrots, broth, and ginger. Bring to a boil, then reduce heat and simmer until carrots are very tender (about 20-25 min).
Carefully pour into a blender (or use an immersion blender) and blend until completely smooth.

Stir in the coconut milk, season, and serve warm!
