Easter brunch is coming. Which means somebody’s about to bring a dry ham and act like we’re all excited about it.
Meanwhile, I’ll be over here with this Mixed Berry Vegan French Toast Casserole, looking like I planned my life.
It’s soft in the middle, golden on top, loaded with sweet, juicy berries, and tastes like spring decided to show up in a baking dish. You prep it ahead of time, slide it in the oven, and suddenly people think you’re organized and emotionally stable.
No eggs. No dairy. No standing at the stove flipping toast while everyone else is dressed and judging you.
Just scoop, serve, and accept compliments like it was hard.
Easter Sunday deserves better than dry toast.
