Quickest Chicken Bacon Ranch Casserole!

2lbs cooked cubes chicken

8-10 slices of cooked bacon- chopped

2 Tbsp garlic minced

1/2 c sour cream

2 Tbsp Ranch Seasoning Mix

1 cup Mozzarella shredded cheese (divided)

1 cup Cheddar shredded cheese (divided)

1 small bad of broccoli/ cauliflower (ready to eat) - steamed in bag for 3 min

Preheat oven to 375F

Combine chicken, bacon (leave some for topping), steamed vegetables, sour cream, seasoning and half of both cheeses.

Blend well, and transfer to baking dish (I used 9 x9)

Top with remaining cheese, bacon and sprinkle more Ranch Seasoning if desired

Bake 15 min

I don’t count carbs so I don’t have counts other than it’s darned tasty

This is absolutely delicious 😋 you would never know it’s low carb.
Recipe: the crust
1 cup of almond flour, 3 tablespoons of pecans(blended in the food processor) and 4 tablespoons of melted butter. Mix and mash into 12 cupcake liners bake at 350 for 5 minutes.
Cheesecake
16oz room temperature cream cheese
2 eggs
1 tablespoon of vanilla extract
2 tablespoons of lemon extract
1/2 cup of swerve or monkfruit confectioners sugars
Mix and distribute evenly.
Bake for 30 minutes
Let sit for 20 minutes in the cupcake pan after removing from the oven
For compote
Just blueberries in a sauce pan for about 10 minutes on medium heat. Drizzle cheesecake and let them cool on the fridge

Pecan pie crust
Beat w mixer 1 block of softened cream cheese with 1/4 cup of peanut butter and 1/3 cup heavy whipping cream till creamy. Add a SF package of white chocolate pudding. (I would have used cheesecake, but didn’t have any) Beat till creamy. Add 1/2 tub of SF cool whip and mix together. Pour into pecan crust. Top w SF cool whip and drizzle SF chocolate syrup. Refrigerate. I didn’t total the carbs because I taught English Language Arts not Math I usually eat pretty simple and clean, but every now and then a girls got to have a treat.

My 3-ingredient, no-guilt brownie
- 2 cups mashed sweet potato
- 1/2 cup maple syrup (other sweeteners will work )
- 1/2 cup cocoa powder
Add some nut butter/oil and a pinch of salt if you’d like! And chopped nuts, why not (In the pictures I put melted dark chocolate on top of the brownie for extra yum yum!)
Bake in 175degree Celsius oven for about 20mins.

Shrimp and Sausage Cabbage Bowl with Rice 🍲🔥😋

Ingredients:

1 lb large shrimp (peeled and deveined)
12 oz smoked sausage (sliced)
½ head green cabbage (chopped)
1 small onion (sliced)
1 red bell pepper (chopped)
1 carrot (sliced)
3 cloves garlic (minced)
2 tbsp olive oil or butter
1 tsp paprika
½ tsp red pepper flakes (optional)
Salt and black pepper to taste
½ cup chicken broth or water
Cooked white rice (for serving)

Directions:

Step 1: Brown the sausage:
In a large skillet over medium heat, add sausage slices and cook until browned. Remove and set aside.
Step 2: Sauté vegetables:
In the same pan, add oil/butter. Sauté onion, bell pepper, cabbage, and carrots until softened (about 10 minutes). Add garlic and cook 1 more minute.
Step 3: Season and simmer:
Season with paprika, red pepper flakes (if using), salt, and pepper. Add chicken broth and simmer for 5–7 minutes until cabbage is tender.
Step 4: Add shrimp and sausage:

• 4 -oz cream cheese
• 2 cups shredded mozzarella cheese

• 3 eggs
• 1 (1-oz) packet dry Ranch dressing mix
• 1½ cups superfine almond flour

Garlic Butter Baked Scallops

Ingredients:

1 lb large scallops, patted dry

4 tbsp butter, melted

3 cloves garlic, minced

1/4 cup breadcrumbs

1/4 cup Parmesan cheese, grated

1 tbsp fresh parsley, chopped

1 tbsp lemon juice

Salt and pepper to taste

Lemon wedges (for serving)

Instructions:

Preheat the Oven:

Preheat your oven to 400°F (200°C).

Prepare the Garlic Butter:

In a small bowl, mix the melted butter, minced garlic, lemon juice, salt, and pepper.

Assemble the Scallops:

Place the scallops in a single layer in a baking dish.

Pour the garlic butter mixture over the scallops, ensuring they are well-coated.

Add the Topping:

In another small bowl, mix the breadcrumbs, Parmesan cheese, and parsley.

A big thank you to my awesome “Aldi Friend” who suggested that I look up the recipe for 8 minute cheesecake !!! O M G!!! I found my new favorite thing!! Next time I’m going to get some cherry pie filling or fresh strawberries to put on top, and I might tweak some things like adding some more cream cheese … but this was sooooo easy and soooo delicious!! Y’all have got to try this if you’ve never made it before!!

8 Minute Cheesecake

1 8oz package of cream cheese softened

1/3 cup of sugar

1 cup of sour cream

2 teaspoons of vanilla

1 8oz container of cool whip

1 graham cracker pie crust

Beat cream cheese until smooth, gradually beat in sugar.

Blend in sour cream and vanilla. Fold in whipped topping, blending well. Spoon into crust. Chill until set; at least 4 hours.

California Turkey Club Wrap

Ingredients

1 tortilla (regular, low carb or gluten free)

1 teaspoon mustard

1 teaspoon mayonnaise

2-3 leaves of lettuce

1 slice cheddar cheese

3 slices of turkey

2 slices of bacon, cooked

3-4 small tomato slices (I used one Campari tomato)

2 slices avocado

salt and pepper to taste

Instructions

Heat your wrap in the microwave or in a lightly greased skillet so it is pliable (skip if you prefer cold wraps)

Next, spread mustard and mayonnaise evenly on the tortilla.

Top with lettuce and cheese. Add turkey slices, cooked bacon, avocado, tomato slices down the center of the wrap. Top with salt and pepper.

Roll very tightly and slice down the center.
