Energy Protein Balls!
If you would like a yummy, hint of sweet with a little crunch pick me up, packed with protein, these are for you!
Almost all the ingredients can be found in our store too!
Start with 10-14 dates (pitted)
1/2 cup sunflower butter (unsweetened)
1/2 cup almond butter (unsweetened)
2 TBLS flax or ground flax
2 TBLS almond flour (can make yourself or buy)
Blend in blender until well mixed and smooth. Transfer to a bowl.
Then, add in chopped nuts and seeds of your choosing (maybe 2-3 cups before being chopped and 1 cup-ish after being chopped. Chop as coarse or fine as you prefer.
I used almonds, walnuts, cashews, pecans, pumpkin seeds and sunflower seeds.
Fold into your blended mixture until evenly mixed.
Here is where you can get creative- add in some dried fruit chunks or chocolate chunks if you want, or just leave as nuts and seeds.
Using a cookie dough scoop, scoop and roll into balls. I like to roll them in sesame seeds or coconut flakes, but there are lots of options!
Freeze or refrigerate.
* If your dough is a little too dry, add in some oil (I use avocado oil).
