As winter shifts toward spring, Kapha can begin to accumulate, bringing feelings of heaviness, sluggish digestion, and low energy.
Ayurveda recommends foods that are warming, light, and stimulating to agni (digestive fire) during this time of year. This Kapha-balancing vegetable stew uses digestive spices, seasonal vegetables, and a cooking method that keeps the dish nourishing without excess heaviness.
✨ Kapha-Balancing Vegetable Stew (with Ghee)
A warming, aromatic stew designed to lighten Kapha, kindle agni, and nourish without heaviness.
Ingredients:
2 tbsp ghee (coconut or olive oil, if preferred)
1 tsp whole cumin seeds
½ tsp whole mustard seeds
1 tsp whole fennel seeds
1-inch fresh ginger, minced
1 tsp ground turmeric
½ tsp ground coriander
Pinch of hing (asafoetida) (optional)
¼ tsp black pepper (or more to taste)
Salt, to taste
3–4 cloves garlic, minced (optional, but strongly Kapha-supportive)
1 large leek, well washed and sliced
2 celery stalks, diced
1 large carrot, peeled and cut into rounds
1 medium zucchini, sliced into half-moons
1 cup green beans, chopped
2 cups Kapha-pacifying vegetables, chef’s seasonal choice (e.g., broccoli florets, cauliflower, kale, collards)
4 cups vegetable broth or water
Fresh cilantro & lemon juice, for garnish
Instructions (Kapha-Supportive Method):
1. Heat the ghee in a large pot over medium heat.
2. Add mustard seeds first and allow them to pop. Then add cumin and fennel seeds. Sauté until aromatic (30–60 seconds).
3. Add ginger, garlic (if using), and hing. Sauté 1–2 minutes until fragrant and lightly golden.
4. Add leeks, celery, and carrots. Sauté 5–7 minutes to cook off moisture and develop flavor.
5. Stir in turmeric, coriander, and black pepper. Cook briefly to bloom the spices.
6. Add zucchini and green beans; sauté another 1–2 minutes.
7. Pour in broth or water and bring to a gentle boil.
8. Reduce to a simmer, add remaining vegetables, and cook mostly uncovered for 15–20 minutes until tender but still light.
9. Season with salt to taste.
10. Serve hot with fresh cilantro and a squeeze of lemon juice.
