These are my husband's & non-lactating friend's FAVORITE cookies. 🍪
Typically anything marketed as a "lactation" cookie just means that it contains ingredients that are high in galactagogues, which when consumed at very high levels could increase milk supply. The best way to increase or maintain supply is effective milk removal, breastfeeding education, and support from a lactation expert like an IBCLC. 📝
Shopping list: (makes 12 cookies, you'll need at least a double batch)
4oz (1 stick) unsalted butter
100g (1/2c) sugar
100g (1/2c) brown sugar
1 large egg (room temperature mixes best)
1 tsp vanilla extract (or almond)
~
83g (2/3c) AP flour
35g (1/4c) brewer's yeast (optional)*
26g (1/4c) ground flaxseed
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
~
120g (1.5c) oats
1/2c chopped dried figs (sub for any dried fruits)
1/3c unsweetened shredded coconut
6oz chopped dark chocolate (the fancier, the better)
Nuts of your choice for topping
Flaky sea salt
Steps:
1. Beat butter and sugars until light and fluffy
2. Add egg and extract, and beat until well combined
3. Mix dry ingredients separately and add all at once, mix until just combined
4. Add oats, figs, coconut, and 5oz of chocolate and bring them together
5. Chill dough for 30 minutes
6. Scoop into large balls, about 1/4c each, and don't flatten. Press the remaining chocolate and nuts of your choice into them and sprinkle with sea salt.
7. Bake at 325 degrees for 12-18 minutes (You know your oven best! These are delicious a little underbaked.)
*While brewer's yeast is optional, it's one of the ingredients high in galactagogues. Even though we can't rely on those for milk supply, if you're making these for a new mama, it doesn't hurt to give her any sort of nutritional boost!
**Dough freezes well, add a couple of minutes to the bake time when you pull them out. They also won't spread as much.
***If you have a food scale, I highly recommend weighing ingredients as it's more efficient and more accurate.
ENJOY! 😘
