Ingredients for Cauliflower Curry Soup:

2 tablespoons vegetable oil, divided
1 head fresh cauliflower, cut into florets
1 small carrot, peeled and sliced into rounds
2-4 slices fresh jalapeno (optional)
1 small onion, roughly chopped
5 cloves garlic, roughly chopped
1 tablespoon curry powder
2 teaspoons ground cumin
