SPOTLIGHT: MINNEAPOLIS BOULDERING PROJECT!!

One of my goals lately has been to make working out ✨fun✨! 🎉

For me that means letting go of my routine workouts and looking for new things to try!!

The Minneapolis Bouldering Project is an amazing space that allows you to move your body at any level you want.

There are several levels of paths you can take which are all color coded. And I can tell you that whether you are on the easiest colors (me) or scaling the wall like Spider-Man (the pros), YOU WILL BE TIRED!!

If you try it out, there are also spaces to get a more traditional workout in with a treadmill, free weights and machines!!

Entry is super cheap and first time climbers get a FREE shoe rental!!

DEFINITELY GIVE IT A TRY:) It’s an awesome refresh by making you return to some childish roots!!

2. Listening to my body for what kind of workout it needs!!

Getting in the gym has been hard, inconsistent and increasingly not fun at times over college.

Lately, I’ve found that getting in the gym with no plan other than moving my body for 30min -1 hr has been mentally engaging, challenging and rewarding!!

ONE OF MY FAVORITE THINGS ABOUT MY COOKING CLASS!!

EATING THE HOMEWORK!!😋😋😋

This weekend I made a Lemon Garlic & Herb Tilapia & Shrimp!!🐠🦐🍋

Served on top of rice, the seasoned Tilapia was roasted in the oven, the Shrimp were cooked on the stove and the lemon juice was added on top to give a very fresh taste to the dish!

In class last week I learned how to make my own 🍎APPLESAUCE🍎!!

This is an excellent recipe and helps make use of apples that are a bit "old"👵🏽!! This way you can get the most out of your money and limit wasted food!!😄

(Or it's just a fun thing to make at home;)

🍎APPLESAUCE Recipe🍎:
Peel about 5 large apples
Cut apples into smaller chunks
Core apples
Boil apples in 1/2 an inch of water for around 30 min (or until soft)
- add apples and cover pot until water boils
Mash apples in pot
Add 1 teaspoon of cinnamon or "to taste" and mix in
Let cool

🍎if you have less than 5 large apples, limit the ratio of water and cinnamon to amount of apples!

🍎🍎I made mine with Honeycrisp apples and it was AMAZING!!! Highly recommend!!

Let's talk about VOLUNTEERING!!

One of my favorite places to volunteer is called Every Meal.

This is an organization that aims to fight child hunger in our very own state!

There are plenty of kids across the state of Minnesota who are on free or reduced cost lunches at school. This organization got its start at Sheridan Elementary in Minneapolis, MN. In 2010, when Every Meal began, there were 90% of kids at Sheridan Elementary that were on this meal plan.

It was during this time that staff noticed kids taking extra food to bring home so that they would have something to eat for dinner.

Kids who are on these meal plans are also at risk for being underfed at home due to financial instability or food insecurity. Every meal works to pack meals and distribute them at schools so that the meals can be sent home and used to actually give kids (and often times their siblings) something substantial for dinner.

While most posts will include some fun nutrition facts, I want to share some of the excellent places and meals in Minneapolis as well!

We’ll start with a Sunday afternoon brunch at Aster Café 😊

Perfect mix of Live Music and delicious food:)

The Aster Country Benedict ($14): QUITE THE TREAT! With a creamy Hollandaise sauce and fluffy Biscuit it was the star of the meal!!

Brisket BBQ Grits ($15): A savory meal with a bit of sweet intertwined! The hint of BBQ sauce was an excellent touch!

While both meals are a bit of a treat for the day in regards to clean eating, they were WELL worth it!
