Tonight I made Coconut Curry Chicken which was a Pinterest recipe! Delicious! Absolutely love Thai and maybe someday I can give a class on homemade take-out Thai food. It’s basically a 30 minute meal and I lucked out having the majority of ingredients on hand. And of course, wine. 😋😁. Turmeric, Ginger, Coriander, Garlic, Red Curry Paste .... all have healing properties and so flavorful. Beyond spoiled.😌 plus Clark is doing the dishes 😍

Funny how there is so much nutritious food still available at the grocery! Building the immunity begins in what we feed ourselves. The best way to stay proactive from anything that tries to attack our cells is to eat plenty of phytonutrients and antioxidants from fruits & vegetables. Make soup, fruit salads and smoothies with the kids! Bring a dish next door to that elderly couple that needs a visit and a nutritional meal. That’s my plan! My shopping is complete and my kitchen is ready! Stress depletes the immunity, it’s so important to not overload the brain with doom and gloom. Make great food and enjoy being a family and keep the immunity levels high. Simple, common sense and conquer the day!

I love a good farmer’s market! Produce makes me happy and curious to try new recipes. I challenge myself to try new fruits & vegetables and so I chose egg plant. Being a night shade vegetable, egg plant has powerful antioxidant power to fight free radical damage in the body. So how do I fit it in my meal prep? This is a vegetable I have never had. I’m reaching out for recipes and ideas on how to fix it. Ideally I would like to cook it on the Hibachi. So does anyone have a suggestion? I encourage you all to try a new vegetable each week. The Saturday morning markets in St. Marys and Celina have many options to choose from. Be creative and enjoy the phytonutrients each one has to offer. And Enjoy!

So how do I stay on track when I WANT something sweet? I hear this quite often from my clients & family. I make power balls and tonight I feel creative and added a few more ingredients to add some more energy to my treat! Don’t be afraid to add more favorites to the recipe. My clients have this recipe and I added walnuts, dried apricots and unsweetened coconut flakes which I mixed together in my mini chopper and use coconut oil on your hands to roll them. So easy but better yet, so yummy! Don’t deprive yourself, make a healthy treat and enjoy it!

Snow is on the way! Everyone has been to the grocery. Everyone will be staying in, including the kids with events cancelled. Why not spend some quality time in the kitchen? We went to the Caribbean (via our kitchen) last snow fall and this is what I created, some of my favorite recipes and the taste was as if we were in the tropics! I challenge you all to spend your time with family in the kitchen and around the table spending quality time with quality food. This is the perfect time to work on the resolution of eating better....so do it and have fun doing it! Please post your creations and tag me. Be safe!

So I love the result of my photo shoot with my granddaughter! My philosophy is to teach our children at a young age how to eat foods that help them grow strong bodies and minds so they can live happy with less illnesses. This picture exemplifies that perfectly!
