Spiced Moroccan Sweet Potato and Lentil Stew

Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1 medium sweet potato, cubed
- 1 cup green or brown lentils, rinsed
- 4 cups vegetable broth
- 1/4 cup raisins or dried apricots, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish

Directions:
1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
2. Stir in cinnamon, cumin, coriander, and turmeric. Cook for 1 minute.
3. Add sweet potatoes, lentils, vegetable broth, and dried fruit. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils and sweet potatoes are tender.
4. Adjust seasoning with salt and pepper. Garnish with fresh cilantro before serving.

I made Hungarian Mushroom soup tonight from recipes that I found here, but I added fresh spinach because I had to get rid of it. Very tasty!
2 C chicken broth
1/2 cup dry white wine
4 tbsp butter
2 C chopped onion
1lb mushrooms
2 tsp paprika
2 tsp thyme
2 tsp dill
2 tbsp soy sauce
1 C whole milk
3 tbsp flour
1/4 C sour cream
2 tbsp lemon juice
Salt and pepper to taste
Sauté mushrooms and onions in butter, 15 minutes. Add broth, wine, soy sauce and seasonings, simmer low, reduce by half. Mix flour and milk, add slowly to pot. Simmer until thick, 10 minutes. Stir in sour cream and lemon juice. Salt and pepper to taste.
Then I added a few handfuls of spinach, because why the hell not? 😎

Avgolemono is a traditional Greek lemon chicken soup that’s simply comfort in a bowl! It’s a gorgeous, delicious soup made with egg yolks and loads of lemon juice for a warming and satisfying meal.
Ingredients
1 tablespoon olive oil
1 medium onion, diced
1 medium carrot, diced
2-3 celery stalks, diced
2-3 garlic cloves, finely chopped
2 bay leaves
2 chicken breasts (about 12 oz / 350 g total)
6 cups (1.5 liter) chicken stock
¾ cup (175 g) orzo
Juice of 1 lemon
2 egg yolks
A handful fresh dill
Salt and freshly ground black pepper to taste
Instructions
Heat the olive oil in a large stock pot or Dutch oven and cook the onion, carrot and celery for 8-10 minutes over medium heat until softened.
Add the garlic and cook for another minute, then add the bay leaves, chicken and chicken stock.
Bring to a boil, then lower the heat to medium-low, cover with a lid and simmer for 15 minutes.
Take out the chicken breasts and bay leaves. Add the orzo to the pot and continue to cook for 10 minutes.
Shred the chicken with two forks and add it back to the pot.
While the orzo is cooking, whisk the egg yolks and lemon juice in a bowl. Take out 1-2 ladles of soup and pour it over the egg-lemon mixture to temper it. Add this mix to the pot and continue to cook for 5 minutes.
Stir in the fresh dill, adjust the seasoning and serve immediately, with some extra fresh dill on top if you like.
