Chunky Vegetable Soup
Ingredients:
1 tbsp olive oil
1 onion, finely chopped
2 celery sticks, chopped
3 carrots, chopped
2 garlic cloves, crushed
2 large potatoes, peeled and chopped
2 large courgettes, chopped
400g can chopped tomatoes
1.5 liters vegetable stock
200g green beans, trimmed and chopped
100g frozen peas
Small bunch of parsley, chopped
Instructions:
Heat the olive oil in a large saucepan over medium heat. Add the finely chopped onion, celery, and carrots, and cook for 10 minutes, stirring occasionally, until the vegetables start to soften.
Add the crushed garlic and cook for another minute.
Stir in the chopped potatoes and courgettes, and cook for 5 minutes.
Add the canned chopped tomatoes and vegetable stock. Bring to the boil, then reduce the heat and simmer for 20 minutes, or until the vegetables are tender.
Add the chopped green beans and frozen peas, and cook for another 5 minutes until the green beans are tender.
Season with salt and pepper to taste, and stir in the chopped parsley.
Serve hot, with crusty bread if desired. Enjoy your Chunky Vegetable Soup!
