birch bark preparation for the still ~

a little glimpse into the work that goes into a birch bark distillation. the green inner bark that grows in the spring time is what I am after for distillation & medicine making. it’s distinctive wintergreen smell is due to its richness in methyl salicylates. I thin the new growth from a stand of birch by my house, harvesting a few of the tiniest saplings to break down.

birch is known as the lady of the woods, which I love to think about when I am out in the forest admiring her shiny & ruffled bark. such a lady indeed.

d i y root beer

join me in the making of an herbalist’s root beer~
it’s not mug and it’s not barqs, but it is a traditional root beer base jazzed up with some modern ingredients. like all real, good jazz, it’s a little different every time-but it’s bitter, like a real root beer should be, & sweetened up to please the palate. I’ll show you how I’ve been making root beer in two ways over the last 10 years- into a syrup for adding to mineral water or seltzer, and as a base to ferment with a ginger bug.

holiday cordials are here! ✨

making these has become a holiday tradition of mine. it begins as summer is becoming golden & fruits are ready. hawthorne berries, blueberries & aronia berries (thanks ) are put into grain alcohol to steep. cranberries come later, but as soon as I see the first vt crop, I snag some & cover them in whistle pig whiskey (thanks ). the berries slowly give their medicine over to the liquor, including those gorgeous bioflavonoids that make the jewel colored liquid. after some months, as the days get short, I strain the fruit out while making a strong bitter root decoction on the stove. this is destined to be a herbal simple syrup, to which I add aromatics to lift it up. the aromatic herbs are added at the end to steep in the syrup before cooling enough to add the final hydrosols. i used rosewater & balsam hydrosols this year, both of which were made in my copper still earlier in the year.
those liquids are combined into a cordial - equal parts fruit tincture + simple syrup (or not so simple, in this case). the result is a beautiful berry colored glass filled with the tastes and smells of the year.

these are strong winter sippers, great for pouring after a big meal, relaxing by the fire, or toasting those you hold dear.
