"This is because once the gallbladder is removed, the cystic duct takes over its functions and is still susceptible to gallbladder sludge and stones.

Bile secreted by the gallbladder helps emulsify fats so they are more easily digested and absorbed. This prevents damage to the small intestine lining and helps you absorb vital fat-soluble vitamins, such as A, D, E, and K, to support brain health, hormone function, cellular integrity, and many other processes in the body. We see this in patients who can’t raise their vitamin D levels on blood tests despite taking high doses of D daily. After bile is secreted, it is sent back into the liver to be used again.

But bile does more than digest fats — bile salts in the bile also bind to receptors in the gut that help regulate the microbiome and the gut’s immune cells.

Fun fact - adding quinoa flour to gluten free pizza dough helps it rise because of its high protein content!

For all you quinoa haters out there, you might even like this dish! It’s full of seasonal veggies, chicken and some feta cheese for some tang. I replaced the broccoli with zucchini from the garden.

Roasted Vegetable & Quinoa Salad

INGREDIENTS
• 1 cup quinoa
• 2 cups water
• 1 head broccoli
• 1 sweet potato
• 4 cups kale
• 1/4 bunch fresh parsley
• 15 ounces cooked chickpeas
• Cubed chicken thighs
• 4 tablespoons extra virgin olive oil
• 1/4 cup crumbled feta cheese
• 2 tablespoons lemon juice
• 1 1/2 teaspoons apple cider vinegar
• 2 tablespoons honey
• coarse sea salt, to taste
• ground black pepper, to taste
• red pepper flakes, to taste

PREPARATION STEPS
1. Preheat oven to 425F.

2. Cook quinoa according to instructions on package, then set aside in a large bowl.

3. While the quinoa cooks, cube chicken and cut broccoli into florets. Peel and cube sweet potato. Roughly chop kale. Chop parsley. Drain and rinse the chickpeas.

4. Toss broccoli and sweet potato chunks with half of the olive oil and roast in oven for 20 minutes.

5. Add kale and chickpeas to the roasting pan, and roast for another 15 minutes. Stir veggies around halfway through.

6. Once roasted, remove from oven and combine with the quinoa. Add in chopped parsley and feta and mix gently.

7. In a small bowl, combine lemon juice, vinegar, honey, and remaining olive oil. Season with salt, pepper, and red pepper flakes to taste.

8. Drizzle the dressing over the quinoa and vegetable mixture, and stir gently.

There’s something about the fall season that just makes you feel like cutting out all the junk that's made you feel like you're 6 months pregnant all summer, isn't there? I’m excited to announce that I’ll be joining the amazing practitioners at The Wellness Ranch beginning on September 1st. I’ll be seeing clients in person on Tu, Wed, and Thu; and virtually on Mondays.
