Looking for a mid-day pick me up?
These protein balls might be just the answer you're looking for!
-1 cup dry oats (quick oats or old-fashioned oats)
-2/3 cup toasted coconut flakes
-1/2 cup peanut butter
-1/2 cup semi-sweet chocolate chips
-1/3 cup honey
-1 Tbs chia seeds
-1 tsp. vanilla extract
Stir all of the ingredients together in a medium size mixing bowl, cover and chill, then roll into balls. Store in an airtight container and keep refrigerated.
