Ever wondered why our sourdough bread is so different?

It's in the flour-- freshly milled each week for flavorful, nourishing loaves.
Even our 'white sourdoughs' get a portion of grainy goodness!

❌White roller-milled flour- the endosperm only, stripped of its bran and germ doesn't go rancid on the shelf like nutrient alive whole grain flour.

🤍Stone milled flour- the whole kernel (bran, germ, and endosperm) is milled together.

🌾Even sifting out a portion of the bran and germ will leave you with a richer and more nourishing flour than roller-milled white flour.

BUT this flour oxidizes or degrades quickly once milled. To get the most nutritional value out of it it's best to use it within a day or store for a time in the fridge or freezer.

8/9- I'll be taking off for my cousin's wedding so no bread except for her wedding that week.
And Sally says goodbye to be off to fulfill her teaching commitments.

So another market day comes to a close...

And I feel richly blessed to be learning to know so many amazing people and pieces of their life's stories.

Those that buy sourdough and those that buy cookies and scones.
Those that feast only on the bread display and those that would like to have our bread but allergies or diets dictate otherwise.
Those that support me with encouraging words and those that give me helpful feedback!
Those that are able to enjoy bread again after avoiding it for one reason or another.
Those that are starting their own sourdough experience.
Those that are enthused about freshly milled grains and what they bring to the table.

I love talking with y'all!

So not long ago a few friends and I were talking about freshly milled grains and how good they are for most of us.
Then one said her aunt couldn't tolerate freshly milled but is fine with white flour.
My mind is like, "WHAT?!" .... I've NEVER heard of this. (For someone without Celiac or serious allergy)
But my mind couldn't help but wonder...

🤍 Were the freshly milled grains she was eating properly prepared?

Grains contain many different components-

Including many good ones such as:

💊VITAMINS
💎MINERALS
🗝️ENZYMES
🥦FIBER

and some not so good ones such as:

⛓️PHYTIC ACID
🔒LECTINS
🚫ENZYME INHIBITORS

And fun fact... the bran and germ in whole grain contain the majority of nutrients but sadly also a lot of the anti-nutrients...

BUT DON'T FREAK OUT!

Did you see Lizzy at the farmers market?👩‍🌾

She opted to go carefree and car free to the on Saturday.🚴‍♀️

She rode this electric cargo bike. This bike can hold over 400 pounds of riders and cargo. I added a milk crate in place of the passenger seat and a messenger bag to secure the goods.👜

What she loaded the bike up with this trip:
- 1 dozen sweet corn ears 🌽
- 1lb of cherries 🍒
- Bread, scones, & muffins from 🥖
- 1 beeswax bread bag from 🐝
- 2 frozen pizzas from 🍕
- 1 fresh breakfast biscuit for me from 🍳
- Buddy treats from 🐶

Stop in the shop & take this bike for a spin yourself - what will you load it with?

Sometimes you miss it...
Like I did with scoring this loaf...

But in this case it's not ruined...
It just wasn't able to expand fully so it exploded a little.

Remember: slow down and take those moments that matter so you don't explode.
AND live a little more fully!

Traveling with starter... Can't believe I've actually reached this level of crazy... Or what?
